Yesterday for dinner I made chicken veggie soup and a hamburger.
Also, I made chicken stock from the remains of two roasted chickens that I had in the freezer. It yielded a little less than 2 quarts. I have it portioned and in the freezer now.
I have some large shells (pasta) that have been taking up space since before the pandemic so I thought I would make stuffed shells. I used Ricotta with a little mozzarella and seasoned it with a little oregano and garlic and a generous amount of dried parsley. I made a simple sauce from a can of tomatoes. It turned out good, I have leftovers for tonight.
I'm a couple of days late but Happy Birthday Joan! Glad you had a great day.
On Tuesday I made a couple of pork chops in Mole sauce (from a jar). Had brown rice and broccoli with it. I have a leftover chop for tonight. Haven't decided on the sides yet. Yesterday I made fettuccini with broccoli and shrimp, seasoned with sesame seed oil and soy sauce.

On Thursday I made enough pizza dough for two pies. I had the first one yesterday with onion, green pepper, mushroom, a little spicey chicken sausage and a little mild pork sausage plus a little pepperoni. tonight's pizza will be the same sans mushrooms.

Yesterday I had a meatball sandwich and soup. I plan on making tostadas and guacamole tonight.
I made some meatballs yesterday, so it was bow tie pasta with meatballs yesterday and today.
I made a pizza last night, red pepper, mushrooms, onion, pepperoni and sausage.
I made a pound cake from a box mix. I added 3/4 dried fruit to it (KA fruitcake mix). It came out nice but I could have put in more fruit.
I had a burger and chicken veggie soup.
On Monday and Tuesday, I made stir fry with pork I had in the freezer. Today I made a thin cheese pizza and soup.
