      I pulled a couple of stuffed peppers from the freezer and cooked them yesterday and had one for dinner with pasta. The second one will be tonight's dinner.

      I also made butternut squash soup. I don't remember where I got the recipe from, but it's pretty easy. Sautee one celery stalk, some onion and a carrot or two until the onion is translucent, add about a pound of cubed squash, half pound of potato and 4 cups of water. Simmer until the vegs are soft, wait for it to cool a little and transfer to a blender in batches to make it smooth, or if you have a stick blender just do it in the cooking pot. A little salt to taste and it's done. I didn't have potatoes so after I blended it I added some instant potato flakes, a little over half a cup gave me the thickness I wanted. I also threw in a pinch of cloves and 2 pinches of allspice. It came out nice. Now I have soup for my lunches, perfect for this really cold weather.

        On Sunday I made a canned salmon mac and cheese casserole, I'll be having the leftovers tonight.

          The other day I made a half dozen stuffed peppers and froze them. I pulled out 2 for tonight and tomorrow. I made a mushroom gravy and had it with asparagus. It was yummy.

            I made Healthy Oatmeal cookies from the Martha Stewart site, in addition to raisins I put in chocolate chips and coconut.

                Yesterday I made a cheese pizza. For the dough I used 25% each of durum and semolina and 50% whole wheat and hydrated it at 70%. Since I was making a single serving I made it in the food processor. The dough came out great, very easy to handle. I was able to stretch it out very thin by hand. I had the leftovers for lunch.

                Today I'm making a small rib roast. Doing the ATK method of roasting it at 250f.

                    I made pork schnitzel yesterday and had a schnitzel sandwich for dinner. Tonight will be leftover, I think I might make pasta to go with it.

                            I paid $10.99 a pound for fresh salmon filet at Whole Foods yesterday. I've never been disappointed with the quality of their salmon.

                            Tonight, I had a pork chop, potato and cauliflower.

                              For lunch I made an asparagus, red bell pepper omelet.
                              For dinner I roasted a salmon filet and had it with fettuccini and kale.

                                I took some turkey bones from the freezer and made a small batch of broth. My dinner was the same I've had for the last several days, beef sandwich and turkey veggie noodle soup,

                                  Looks good, Mike, and I agree, it should be a larger diameter.

                                  I'm making cinnamon rolls right now.  I had some fruitcake dried fruit mix that needed to be used so I took it (about 1/3 cup) and added raisins to make a cup, added a shot of rum to it, covered it and microwaved it on half power for a couple of minutes.  By the time I added it to the dough it had absorbed all the rum.  The rolls have been formed and are rising right now in the baking pan.  I haven't made these in a while and am looking forward to them.

                                  ItalianCook, I'm pretty sure you could sub out the whole wheat for whatever flour you prefer.
