WE had leftover beef tenderloin strips stir fried with broccoli, onions and peppers served over ramen noodles. The price of beef has since skyrocketed!
I made grilled soy-basted chicken thighs (boneless,skinless) with spicy cashews. I baked it according to "Nan's best" grilled chicken with cashewsv recipe. It was originally a nyt recipe. It was very good.
I made Eating Well's sheet-pan shrimp fried rice. I marinated the shrimp in a little oil and garlic salt first. The dish includes veggies so it's a one pan meal. It was very good on first go round. Not as great reheated the next day.
I don't know if this snack mix qualifies as baking but you do bake it. It's Dave Lebovitz's Spicy Pretzel and nut mix. It's crazy addicting. I don't use much of the cayenne pepper powder, infact I often substitute a milder powder. I make it at least every three weeks. I use salted pretzels and nuts so I don't add salt at the end.
I made a cold green bean salad to accompany my neighbor's sausage sandwiches. I decided to go with a salad that called for basil since I had so much. Unfortunately the basil ruined the salad. It was bitter! I don't know if I chopped too much or if the herbs get stronger later in the season. Lesson learned. I'll stick with a tried and true next time.
I'm late to the party but Happy Anniversary to everyone married in August! August is not usually a rainy month but it can get hot and humid. And no snow!!! So Celebrate!
We had scrambled eggs, bacon and pancakes with grade B maple syrup! Breakfast for dinner at it's best!
Could you do these in silicone muffins cups?
I took one of the TJ's flat bread pizza crusts and layered pesto sauce topped with pizza sauce, cooked Italian sausage, pineapple, red onion slices presoaked in water and mozzarella cheese. This bakes at 425 for 12 minutes. We love the spiciness of the sausage offset by the sweetness of the pineapple.
Lamb loin chops marinated for one hour in oil, fresh rosemary, thyme, garlic and salt then sauteed
for 3 min per side and baked at 400* for 10 minutes. I served them with mint jelly, mashed potatoes and salad.Thanks for your empathy. I'm sure you all have similar stories!
I committed myself to bake cc cookies for the gentleman in our community who helped put
our flag up. I found a new cookie recipe online that used an extra 1/4 tsp baking soda and all brown sugar. I preheated my oven and scooped out my cookies on sheet and placed them in the oven. When I tried to set timer on oven it would not set and read "your oven door is open". I couldn't get oven door to close. I checked the internet which suggested pressing the lock button which was a mistake. My oven locked (not door) turned itself off with my cookies melting but not baking in the oven. A call to whirlpool and a trip to the fuse box turned the lock button off but did not fix my door. I tried baking some cookies in my toaster oven. Bad idea. So I baked the cookies with a semi closed door and no timer. The cookies were all different shades of brown. Some turned out like brownie brittle. My husband has eaten most of them anyway. I had the oven door fixed and baked another batch of cookies. It turned out to be a good recipe from Cookies & Cups.-

Since I hate to waste I decided to try making a dessert (to bring to neighbors) using up some of my Birds custard powder. I checked the internet for pie filling ideas and for pie crust ideas using up my biscoffs. Should have trusted the custard container directions and not the internet. I ended up stirring that pudding mix for 20 plus minutes until I realized that was too long. I followed the crust directions on another site and it ended in a non cohesive crumble. So I dumped the scrambled egg looking custard in a bowl with the cookie crumbs. I brought over some whipped cream and everyone thought it was delicious!!! Go figure.
I haven't enjoyed BA for a few years now. I think their recipes are strange.
We had store bought salad and cheese bread. The electrical system in our building suffered a fire at 1am Sunday. We will have no electricity for months. Our neighbor in the condo (Florida) helped us to connect to generator so we could plug in the refrigerator. Needless to say neither the stove nor microwave nor dishwasher is working.We have to wash dishes in cold water. We are scheduled to leave on the 24th for home and since the weather hasn't been too bad and the weather is good we will stay til then. Can't wait to get home and start cooking and baking again.
