I did more Bao yesterday. I messed up the ingredients and forgot the sugar and baking powder till after all the other ingredients were mixed. What a mess. I knead it in, let it rise and then tried desperately to rub all the lumps out. A couple extra rises and kneading later all the lumps were out but the dough was rather soft. I need to remember to look at the recipe no matter if I really believe I have it in memory. I am making this a lot recently. My father's appetite has been rather picky but he will slowly eat one bun for a meal and finish it, where he will eat only half a bowl of rice and stop.

July 1, 2025 at 3:12 pm #46682No baking here, navlys! Temps are and have been for a few days in the mid-90s. I did make a cinnamon streusel coffeecake a couple days ago. Half went into the freezer, and we are rationing the remainder.
July 1, 2025 at 10:01 pm #46685Yes, the heat has been unrelenting, and even the "breaks" have been very warm. I baked five small loaves of wholegrain pumpkin bread on Tuesday evening. The weather had cooled enough that the oven would not heat up the house too much. I also ran the hood fan to vent the heat. I will keep one loaf out to eat for dessert tomorrow and the next day and freeze the other four for dessert emergencies. Tomorrow morning is supposed to be cooler, relatively speaking, so I will try to do some baking then.
July 2, 2025 at 7:41 pm #46691I baked Soft Oatmeal Cookies on Wednesday morning. These will be for our 4th of July trip. It was hotter today than expected.

July 3, 2025 at 6:43 pm #46695Aurgh! Store-bought bread! Of course, I was out of cookies and ended up buying a package of Newtons earlier this week, so we do what we have to do. Sigh.
I had a cup of zucchini left over from the meatloaf I made last night, so on Thursday morning, I baked Zucchini Muffins, using my adaptation of the Shipyard Galley recipe that King Arthur sent out long ago in an email (back when they communicated with customers on a more personal level.) I had one for breakfast, saved one for tomorrow's breakfast, set aside one for Scott to have with his tea today, and froze the other three.
I also baked my adaptation of Ellen's buns, but I made them as sixteen rolls.

July 6, 2025 at 7:29 am #46706I did make the pizza and another batch of bao yesterday. The pizza came out just in time for supper and the bao was steamed as the day started to cool down.
