Happy Easter!
Happy Easter to everyone and I don't know what I'm cooking today.
Mike my husband doesn't like bread,he'll eat Nature"s Own Honey Wheat and that's it.I have made bread that is very close to that bread but he has never ate any bread that I've made.He'll eat cookies,cake,pastries,but loaf bread or rolls no.So I make the bread and share with all my kin folks and friends and that's what I love to do.He'll smell it and say that smells and looks good lol.I would never buy bread if he'd eat what I make and it's truly lots better than what I buy for him.I bet he's never ate over 6 cinnamon rolls.Go figure grrrr.
Wonky you amaze me in the amount of bread you're baking at one time.I do love to bake but my knowledge in a lot of this is very minor to some of ya'll.I love baking but have a husband that does not care for bread....what is wrong with him.Me ...I love it all.
Tonight we had a Mexican casserole and bread and butter.Scrambled hamburger and onions till done drain any grease,season with salt and pepper.In a small pot heat one small can of enchilada sauce with some jalepeno's as much as you like or none at all and small jar of taco sauce or picante sauce.In 8x8 dish put a small amount of sauce,layer of torn corn tortillas,layer of meat ,sauce and shredded cheese,repeat 2 or 3 times and top with cheese,bake in oven for 20-30 minutes at 350*.We always just eat this with bread and butter.This recipe was one that my husbands uncle learned to make when they lived in Clovis New Mexico when he was in the Air Force many years ago.
We had dry toast with mashed potatoes on top and left over stewed beef and gravy on top of potatoes.
No I haven't tried but is interesting.

Tonight we had the last of the vegetable beef soup and pimento cheese sandwiches.
Made another batch of pan grease.BakerAunt Shoepeg corn is so tender and good.I buy Le Sueur brand of canned corn,it's very tiny kernels and just tender for canned corn.I just heat it up with a little butter.The other brands I've bought before were so big and tough looked like what we use to feed pigs.Trust me look for this you'll love it.I've seen it in grocery store in frozen section with cream sauce over it but I've never tried that one.

Tonight we had Beef stew,thickened potatoes and shoe peg white corn.
Today I baked a loaf of Cinnamon bread from KAF site,mixed as normal but added mashed potatoes instead of flakes.When I patted it out to sprinkle cinnamon mixture I wasn't thinking and did it like cinnamon rolls well when I realized it I should have cut them for rolls and bake but noooooo I scrunched it up and got that long snake in the bread pan,I was using a 9x5.It baked fine but had a crease half way across the bread so it was like a bump on each end.After it has cooled I cut and it's fine tastes like a cinnamon roll and the swirl stayed together,no separation.Cinnamon rolls stay on my brain I guess lol!Anyways all is good.I did as ya'll said and left in the pan to cool awhile,it helped.
Tonight we had chicken tenders,broccoli and cheese sauce with a baked potato.
