Happy Birthday, Joan!
February 27, 2023 at 9:21 pm in reply to: What are you Cooking the Week of February 26, 2023? #38572I roasted a chicken today, had it with noodles and Brussel sprouts and cauliflower. It's a chicken that I had in the freezer since June, 2021. It's still good!

I had roasted salmon, cauliflower and pasta.
I made stuffed peppers yesterday. Tonight I had a pepper, mashed potato and cauliflower.
Happy Birthday to your husband, Joan!
I had pork loin chops, a baked sweet potato and Brussels sprouts.
Last night I had chicken veg soup and a pork loin chop.
I had a turkey sandwich and chicken veggie soup.
I had leftover turkey, mashed tater, broccoli and carrots, cake for dessert.
I made a white cake from a box mix. I added cake spice to it and made a ganache and sprinkled it with shredded coconut. I reduced the eggs from 3 to 2. It's a little crumbly but it tastes good.
I made a turkey breast (a Butterball boneless) and had it with chicken veg soup.
Skeptic, you can portion and freeze the leftover sauce for future pizzas. Or you can thin it a little and use it as a pasta sauce.
There's snow on the ground and more in the air, so I'm making a little soup. I saved most of the bones from a few weeks ago I roasted a chicken. I'm making a broth from it now, with celery, carrot, onion, garlic, peppercorns and a bay leaf.
I made meatballs (not Italian style) and had it with rice and broccoli.
On the mid day news they said the country's largest egg producer profits are up 600%. So it seems that the big increase in prices isn't all due to bird flu, etc. It looks like they took a page from the oil companies playbook.
