One of my mother's most memorable recipes was her "American chop suey". My friends loved it, my husband loved it and I loved it until the day I made it and ate it when I was pregnant. That was it for me and now although I know it had ground beef , macaroni and tomato sauce I cannot for the life of me remember the rest and I don't think I want to.
My lids get rusty looking. Can you still use them?
I cut some chicken breasts into cubes, covered them with oil and a rub of several Penzeys spices and grilled them on skewers. It didn't take long for them to cook. I served them with potato salad that I made with bacon in it and I boiled some corn on the cob. Oh and I made a mango salsa to go with chicken. I should have watched the salt in the potato salad because the bacon is salty. I picked the corn with the smallest kernels. Big mistake. The kernels had no depth to them. All in all not too bad a dinner,
We had chicken satay with the sauce recipe from the summer 2010 KA baking sheet.
I like "Chopped" because it somehow inspires me to use up what I have in the cupboard and fridge (short for frigedaire) in a creative way. I just wish we could see how they put some of the sauces together from beginning to end. Funny skit.
I made HolyYumYum Chicken with Dijon mustard and maple syrup. Easy but tasty.
We had roasted tomato and feta shrimp from "my recipes". I served it over Tj's lemon pepper pasta . Very nice. Next time I will only use 1/2 of the pasta pkg.
Not exactly a scratch meal but I sautéed some marinated (in red wine vinegar dressing) chicken strips in olive oil and then added Bird's eye Asian vegetable blend followed by TJ's simmer sauce. We were in heaven!
It's" let get rid of the food in the freezer" week. I marinated some boneless chicken thighs in teriyaki sauce then baked them after adding some honey and sesame oil. I had mozzarella in the 'fridge so I topped the thighs with the cheese for the last 10 minutes of baking. Not necessarily the healthiest meal on the planet but it sure was a pleasure to consume.
The St. Pete food tour came up on Groupon. The cost was super reasonable but we purchased it at the right time. St. Petersburg is undergoing a rejuvenation.
We went on a late afternoon food tour in St Pete Florida. We started with fish tacos with a mango salsa on side. Next was a chicken curry dish at a British pub. Then we had roasted salmon on white sauced tortellini at a restaurant on the water and
finally 3 delightful desserts from a French bakery,a tart with non bitter raspberries a macaron and a truffle. Too full for anything else. All delicious too.We had spaghetti with meat sauce last night. I think tonight I will make chicken salad with grapes and serve it in a rolled tortilla with baked sweet potato fries. It's always fun to see how you can use up your freezer and pantry ingredients when your stay is limited. I feel like I'm a contestant on chopped!
I finally made the cinnamon banana muffins. I didn't do the "dunk in the butter" step. I did sprinkle tops with a little sugar before baking. I enjoyed them but my husband didn't think they were sweet enough.
I have two frozen bananas I have to use up. Please let us know how the muffins turned out.
The place we are staying at has a Friday cocktail party every week. Someone brought some asparagus and brie tartlets from the "dairy goodness" web site. They were yummy. I made appetizer meatballs with a different sauce from the usual jelly and cocktail sauce. The first time I made the sauce I used dried onion flakes. the second time I used fresh onion chopped. I liked the sauce made with the dried onion better. I used Rosina frozen meatballs. This Friday we are celebrating St. Patty's day and I will make old fashion potato salad with hard boiled eggs.
