Pimento cheese this is the way I learned to make it.I get one half pound of yellow american cheese from deli and get them to cut a chunk not sliced.I take that home and grate that,then I add 1 small jar of diced pimentos that's about 4 ounces with all the liquid- do not drain- then I add about one half cup of mayonnaise maybe more and lots of black pepper and stir up till creamy.When I made mine I ended up with a little over 2 cups.This is the way we use to make it at a school I worked at many years ago.Hope you like it.
Today I made a small pot of hamburger vegetable soup with fresh pimento cheese sandwiches.
Tonight we had chicken tenders,stewed squash and thickened potatoes.
Today I tried a new recipe Basic sourdough bread from King Arthur.I've never used so much starter in a recipe it used 2 cups to 2 and a half cups of flour.It called for some yeast but I didn't add that as I wanted true sourdough.So it took longer to rise but that's OK.I started at 8:30am and had it baked at 4:30pm.It was very light in color but done and had good chewy crust and soft inside.Taste was good so I'm happy,only thing is when I formed a log for the 9x5 pan when it rose it split on top but that's OK too.I'll keep working at it.I've tried several recipes and haven't found one I want to say will be my go to recipe.I slashed it on top but I don't think it rose enough as it was just over the top of the pan.

Tonight I used all the left overs for lima bean soup,chopped 2 carrots,1 rib celery,one half cup onion and the tomato gravy cooked that with 2 chicken bullion cubes and a little garlic till soft, added the beans and rice and simmered about an hour.Hit the spot and all the left overs are gone.
Tonight we had Cubed pork,rice and tomato gravy and dry lima beans.

Tonight we had smoked pork chop,creamed corn,boiled okra and buttermilk biscuits.
The only baking I did was a peach cobbler and it was good.I like it better with fresh peaches but the canned ones was fine.
Today we had Tuna salad sandwich,pork -n-beans and peach cobbler.

Today we had sauteed chicken with onions all marinated in the vinegar and oil dressing,mashed potatoes with sour cream and left over green butter beans.
We went out for fried grouper,cheese grits,slaw and hush puppies.
Tonight we had Chef Salad with a baked potato.
Supper tonight was Smoked pork chops,steamed cabbage and macaroni and cheese.
