      DESCRIPTION
      Fab Buttermilk Bread

      SUMMARY
      Yield 0 File under Yeast Bread/Rolls (not sourdough)

      INSTRUCTIONS
      Fab Buttermilk Bread

      1/4 cup lukewarm water
      1 Tbsp. Active dry yeast
      2 cups Buttermilk
      1/4 stick butter
      4 to 5 cups bread or all purpose flour
      1 tsp. Salt
      1/4 tsp. Baking soda
      2 Tbsp. Sugar

      Options: add 1 cup o.f. oatmeal
      Sub bread flour with 1 cup whole wheat flour
      350 ?a oven
      Combine buttermilk and butter in small saucepan and heat over low until butter melts. Don't worry if the buttermilk curdles. Let cool until lukewarm. In the meantime, combine the water with the yeast until foamy. Mix all ingredients together in mixer or bread machine.
      Let rise in buttered bowl until doubled about 1 1/2 hours. Punch down and let rise until doubled again (I skip this step). Punch down and let rest 10 minutes.
      Divide dough in two, place in greased loaf pans. Cover let rise 45-60 minutes.
      In preheated oven until golden 35 to 45 minutes. Cool on wire racks.
      I have made this with the options and it turns out well either way.
      I have also used the quick yeast method and it turns out fine that way also.

      I think this recipe originally came from a book by Cresent Dragonwagon. But I almost never follow a recipe exactly so that is why the options are there, which I almost always use.
