      This is an old 4-H recipe that our family loved...I have used this recipe, iced them and added sugar holiday decorations for all seasons and folks loved them.

      Butterscotch Refrigerator Cookies

      3 cups sifted all-purpose flour
      2 1/2 tsp. baking powder
      1 1/2 cups fat
      2 cups brown sugar
      1 tsp. vanilla
      2 eggs

      Sift the flour with baking powder onto waxed paper and set aside.

      Put the fat into a mixing bowl and cream it until soft.

      Add the sugar gradually, stirring until mixture is light and fluffy.

      Add vanilla and continue creaming until ingredients are well mixed.

      Beat the eggs and then gradually add them to the mixture.

      Add the flour/baking powder mixture and stir until ingredients are well mixed.

      Put half the dough onto waxed paper. Press together and shape into a roll about 1 1/2 inches in diameter. Wrap the waxed paper snugly around the roll. Do the same with the other half of the dough.

      Put the rolls into the refrigerator for several hours. When the dough has chilled thoroughly, it will be firm and easy to slice.

      Cut into 1/4 inch slices with a sharp, thin-bladed knife, using a sawing motion. Put on an ungreased cookie sheet, allowing space between cookies.

      Bake at 400F degrees for about 10 minutes.

      This recipe makes about 5 dozen cookies.
