I made arepas today. They are not very pretty, but taste excellent. I chopped up 1 cup of whole kernel corn (canned, drained) to add to the batter; and I think this adds a lot to the flavor, although fresh would be even better. After they were cooked on the griddle, I put shredded mozzarella between two of them for lunch.
February 11, 2024 at 6:03 pm in reply to: What are you Cooking the Week of February 11, 2024? #41843We had leftover shrimp alfredo and arepas for dinner. I have no plans for the Super Bowl tonight; I'll probably go to bed and read for an hour or so.
I'm sorry to learn Cass has passed. I do hope his last days were peacful and full of wonderful memories of his life in various kitchens. He was a wealth of information and so generous with helping us when we needed it.
We had kielbase with peppers and onions on fresh burger buns - we haven't had these for ages.
I made burger buns today. I used 1 cup of bread flower and 3 cups of AP. They rose higher than any I've made for 10 years!
I made a big pot of venison stew for my husband to take to a pot luck, but held back a bowl for my dinner, and more for our dinner tomorrow night.
We had shrimp alfredo on farfalle with broccoli.
Today I baked 2 dozen of the molasses cookies I mixed, scooped, and froze in December.
Tonight we had Greek-style chicken thigh, carrots, and cauliflower salad.
I made cheesecake today. I used a regular sized recipe, but divided the batter in half for two 7" springform pans. They both had a chocolate graham cracker crust. One filling was vanilla swirled with frozen raspberries from last summer's crop. It's in the freezer for later, and I will put a chocolate ganache on it when we're ready to eat it. The other one is chocolate with chopped candied orange peel swirled into it. We've cut into it, and I didn't get much of an orange taste from the chunky little peels.
I had a tuna sandwich and my husband had a roast pork sandwich.
I cooked a pork loin roast, with potatoes, carrots, and onions in the same pot. I made au jus with boiled cider, chicken broth, and Herbes de Province.
For lunch today, I heated up leftover bulgogi bibambap, and decided next time I make it, I will double my recipe so I have more leftovers. We had tuna fish sandwiches and potato chips for dinner.
For dinner tonight we had frozen, breaded fish fillets, mashed butternut squash from the freezer, and corn-bean salad.
Our dinner tonight was omelets and English muffins.
