      Boneless roast leg of lamb, oven fried potatoes, and carrots. We'll have bearnaise sauce on our lamb and mom mint jelly. Have a loaf of italian bread left from 2 loaves I baked on Sunday. Shorty's gonna be happy to have some lamb later. Snowing here! 🥳🥳🥳

        In case anyone is interested in the recipe. I prefer Michelle Urvater's blondies which I bake often.

        Chocolate Chunk Cranberry
        Coconut Blondies

        1/2 cup unsalted butter, softened

        1/2 cup packed brown sugar,

        1/3 cup sugar

        1 large egg

        1 tsp. vanilla

        1 cup flour

        1/4 tsp. baking powder

        1/2 tsp. salt

        1 cup dark chocolate chunks

        1/2 cup craisins

        1/2 cup chopped pecans

        1/4 cup shredded coconut

        Preheat oven to 350 degrees.  Line 8 x 8 in. pan with parchment paper and spray with Pam.

        Beat butter and sugars until light and fluffy.

        Beat in egg and vanilla.

        Mix in flour,  baking powder and salt until just blended.

        Fold in chocolate, cranberry, pecans and coconut.

        Spread evenly in pan.

        Bake 35-40 minutes until golden brown.

        Cool before cutting into squares.

          A woman I used to work with sent me a recipe for chocolate chunk cranberry brownies. Mom and my husband like them. They're good but too much stuff in them for me. They're blondies with choc chunks, pecans, coconut and craisins. It called, of course,for brown sugar which I have tons of with most of it being hard or sandy. Then I remembered I have a vacuum sealer! Duh. I softened it all up in a Tupperware container with several slices of bread and then packed and vacuum sealed it.

              Wow! Everyone's baking sounds and looks delicious.
              I made oatmeal raisin cookies, per request, for someone I worked with at the library. It's her birthday tomorrow. Also, a batch of SoNo bakery oatmeal chocolate chip coconut cookies. They're soooooo good! Since I had walnut filling left over, made a Hungarian nut roll today, too. Whew, I'm done. Wish I had the inclination to vacuum! Lol

                  RiversideLen, my husband watched the thin man during the afternoon. We've seen them so many times and they're still fun to watch. I caught a couple of them when I had time to sit down.

                      Happy day after Christmas. It was a quiet day for the 3 of us. Like chocomouse, we woke up to 61 degrees here in the mid hudson valley and the 14 inches of snow we got last week is gone. Got 1.5 inches of rain. Took Shorty to the park, had some mulled wine, knit for a bit, watched White Christmas on Netflix. All in all, a fine day.

                        Per mom's request, Christmas dinner is lobster tail. I'll make clarified butter, fries, and coleslaw.

                            Yesterday brought some Christmas cookies over to my friend and left them on her porch because she was feeling a bit ill. She had a covid on Friday and heard today she is positive for covid. This suxs!

                                Hi, skeptic7. We ended up with 14.5 inches. Still alot on the ground but melting a little. I have the front walk and a big driveway. Yeah, stollens are finished for the year. Now is the only time I can find fresh yeast so I made some to freeze and sent some to my brother. I just fold mine over a bit before the bottom edge. Not too many people like stollen and lump it in with fruitcake. I actually like fruitcake but it gets a bad rap.

                                  We had ravioli and meatballs. Christmas eve we always do hors d'oeuvres.
