For the Mexican casserole I scrambled hamburger with onions,seasoned with salt and pepper,heated some picante sauce with half enchilada sauce and a few jalapenos then layered corn tortillas cut in quarters,a layer of hamburger,layer cheese and sauce .I repeat this 3 times topped with cheese and bake at 350* 20-25 minutes and we like it topped with a big dollop of sour cream.You could add beans and corn but I don't..We love Mexican food and love it hot and spicy.If I have any of this left I'll put it on a flour tortilla and roll up,so good.
Chocomouse our food sounds about the same .

I used leftover peas, butterbeans creamed corn and one can of corn,tomato okra mix and added more frozen okra for a good thick soup.So good with leftover corn bread and chocolate pudding for dessert.

I've used half and half on apple pies for a wash.
Mike I checked out both of those sites and the pie maven had some good looking recipes.
Tonight we had meatloaf, mashed potatoes and creamed corn.
Tonight we had fried cubed pork, macaroni and cheese and green beans with diced potatoes in them.

I cooked sausage,black eyed peas,potato salad and corn bread.

Tonight we had stew beef with onions and mushrooms in gravy over rice and cooked carrots,I also made another salad of sliced cucumbers,onion and tomatoes with vinegar,oil, sugar and a little salt and pepper.
We had hamburger steaks with fries.
