I made an apple pie this morning. I've been really sick with a lung infection for 5 weeks, so standing in the kitchen for over an hour to make it was a challenge, but it shows that I am finally making progress and getting better.

On a good note: KABC has just announced a "retail store sale" of 15% off $60 or more! Almost all of their sales exclude retail store sales! I need to work on my gift list to see what I might want to buy.
Dinner tonight was tomato soup from the freezer, with blueberry muffins hot out of the oven. Tomorrow we are going to our son's home for Thanksgiving dinner; he is smoking a turkey. I'm really looking forward to this as their three children and significant others will be there also.

There is a large hydroponic tomato farm a mile down the road from us. The tomatoes are beautiful and delicious! Almost as good as garden ripened tomatoes.

I made Len's semolina- rye. I shaped it into a dozen buns to have with soups this winter, and one nice loaf of bread.
November 16, 2022 at 6:34 pm in reply to: What are you Cooking the Week of November 13, 2022? #37171We had grilled salmon, mashed buttercup squash, and a green salad. This was our first winter squash from last summer's garden. It was delicious and I'll have plenty to freeze.
November 15, 2022 at 6:36 pm in reply to: What are you Cooking the Week of November 13, 2022? #37161Dinner tonight was a repeat of a meal 2 weeks ago: breakfast sausages, sauteed apple slices with maple sugar and cinnamon, cole slaw, and corn cakes (with fig jam on mine). I could eat this once a week during cold weather. They are predicting 3-5 inches of snow here overnight, our first of the season.
I store all nuts, including pecan meal. in the freezer. But I guess I should check the meal before I use it. Thanks, Mike.
I was thinking that I could probably use the pecan meal in any muffin or scone that calls for pecan or walnuts. For example, maple pecan scones. I would just need to adjust the amount of liquid.
Right now I have the KABC Mostly Apples Apple Cake in the oven. It calls for almond flour, on my use-it-up list. I also used maple sugar instead of brown.
The Apple Cider Oatmeal Bread looks interesting, but I don't have any boiled cider. I'll need to beg a couple of liters of my husband's newly made cider and boil it down.
November 13, 2022 at 5:36 pm in reply to: What are you Cooking the Week of November 13, 2022? #37143We had ham steak, mac and cheese, and leftover roasted root veggies.
So nice that you still have produce coming from your garden! If you add enough garlic, oregano, etc. you will overcome the flavorless tomatoes!
We had grilled pork chops, green salad, and roasted root vegetables: white potato, sweet potato, carrots, butternut squash, and parsnips.
I just made corn cakes, big flat round ones, in a cast iron "muffin" pan. As usual, I used maple sugar and maple syrup in the batter; it doesn't make it very sweet, but does add maple flavor. I will spread them with fig jam for dinner.
I just made a big pot of Duchess (aka cheese or carrot) soup, for dinner tonight and for the freezer this winter. It's one of my favorite soups.
Foods high in Vitamin K are also some of my favorite foods, and during gardening season I have to closely monitor myself for signs I need to cut back on the "green foods."
Interesting story. I've heard of the bowls and rolls stories over the years, but never have experienced it myself.
