      3-1/2 whole chicken cut into 8 pieces
      3/4 cup vegetable oil
      1/2 cup flour
      1 tablespoon paprika
      2 teaspoons salt

      Preheat oven to 375 degrees. Pour oil into a pan with sides that's big enough to hold all the chicken. Remember, as the chicken bakes, the chicken will render fat, so sides need to be high enough to hold more liquid than just the oil.

      When oven reaches temperature, put the pan of oil in the oven. Let it heat for 10 minutes.

      Put flour, paprika & salt in a plastic food bag. Shake to mix ingredients. Place one piece of chicken at a time into the bag & shake to coat chicken.

      CAREFULLY remove the pan of oil after the 10 minutes. Place chicken skin-side down. CAREFULLY place pan back in oven. Bake for 30 minutes. Then CAREFULLY remove pan from oven. Turn the chicken to other side. CAREFULLY put pan back in oven. Bake for 20-30 minutes until chicken reaches safe temperature.

      I'm stressing to be careful when handling the pan with hot oil, because the oil sloshes around.
