      COOKIES/BARS: Healthy Rye Happies
Submitted by beachdee on April 24, 2004 at 9:21 pm

To give proper credit, I can only say I have an ancient recipe card I copied from my mom's recipe box when I was leaving home. I believe the original of this came off of a local mill's box of rye flour; that's the best I can do.

      1/2 cup rye flour
      3/4 cup wheat germ
      1/2 tsp. salt
      1/2 tsp baking powder
      3/4 cup chopped walnuts
      1 cup brown sugar
      1/3 cup oil
      1 tsp. vanilla
      2 eggs

      Mix dry ingredients together.

Mix wet ingredients together well, then add dry to wet, stirring just to blend.

Spread batter evenly in well-greased 8x8-inch pan. Bake at 350F for 30-35 min.

When cool enough to handle but still warm and moist, cut into pieces and roll in powdered sugar. Store in airtight container.

      Eat and be happy!!
