      Buttermilk Biscuits - 250

      12.75 pounds AP Flour
      10 ounces Baking Powder
      2 tablespoons salt
      4 tablespoons Baking Soda
      10.5 ounces sugar
      8 pounds unsalted butter
      1 gallon + 1 pint buttermilk

      Mix dry, cut in butter using food processor. Lightly fold in buttermilk, pat out 5/8 inch thick in pan.

      Bake at 400 for 16-18 minutes.

      I pat out into a sheet pan. Then I score the dough with an oiled and floured pizza cutter before baking.

      This makes about 250 biscuits, 2 1/2 inches in diameter, 5/8 of an inch thick.
