      POTATOES - Baked Potatoes O'Brien for 100

      30 pounds potatoes, 3/8 inch dice
      6 sweet onions, 1/4 inch dice
      9 green peppers, 1/4 inch dice
      9 red peppers, 1/4 inch dice
      oil
      granulated garlic
      paprika
      panko bread crumbs
      cayenne pepper
      salt
      pepper

      1. Scrub and dice potatoes.

      2. Rinse the potatoes in cold water.

      3. Drain.

      4. Using sheet pans with oiled parchment paper: Pan potatoes 1 layer deep, bake in a convection oven at high fan, 400 degrees, 40 minutes.

      Potatoes can be cooled and refrigerated at this point.

      5. Sauté onions and peppers until tender crisp. Add to potatoes.

      6. Mix potatoes with oil to coat, add panko bread crumbs, spices.

      7. Re-pan potatoes and bake in a convection oven at 350 for 30 minutes on low fan.
