We had baked pork tenderloin,baked potatoes and butter beans.
I didn't know that about your son Mike.So glad he wasn't at work today.In this day and time you never know when you'll be caught up in something like this.I can only imagine...
I looked for the recipe too but I didn't find one with boiled eggs.The recipe you posted looks good,I'm not crazy about curry.
S_Wirth we love our greens too!I like to have a bowl of the greens and pot liquor with cut up raw onions and corn bread crumbled in them,man I can make a meal off that alone with a good shot of vinegar pepper sauce on top.

Tonight we had chicken tenders that I cut from a large breast,fresh turnip greens and turnip roots cooked in smoked ham,potato salad with corn bread.
Tuna salad sandwiches.

Happy Easter to everyone and I don't know what I'm cooking today.
Mike my husband doesn't like bread,he'll eat Nature"s Own Honey Wheat and that's it.I have made bread that is very close to that bread but he has never ate any bread that I've made.He'll eat cookies,cake,pastries,but loaf bread or rolls no.So I make the bread and share with all my kin folks and friends and that's what I love to do.He'll smell it and say that smells and looks good lol.I would never buy bread if he'd eat what I make and it's truly lots better than what I buy for him.I bet he's never ate over 6 cinnamon rolls.Go figure grrrr.
Wonky you amaze me in the amount of bread you're baking at one time.I do love to bake but my knowledge in a lot of this is very minor to some of ya'll.I love baking but have a husband that does not care for bread....what is wrong with him.Me ...I love it all.
Tonight we had a Mexican casserole and bread and butter.Scrambled hamburger and onions till done drain any grease,season with salt and pepper.In a small pot heat one small can of enchilada sauce with some jalepeno's as much as you like or none at all and small jar of taco sauce or picante sauce.In 8x8 dish put a small amount of sauce,layer of torn corn tortillas,layer of meat ,sauce and shredded cheese,repeat 2 or 3 times and top with cheese,bake in oven for 20-30 minutes at 350*.We always just eat this with bread and butter.This recipe was one that my husbands uncle learned to make when they lived in Clovis New Mexico when he was in the Air Force many years ago.
We had dry toast with mashed potatoes on top and left over stewed beef and gravy on top of potatoes.
No I haven't tried but is interesting.
