I grilled chicken breasts marinated in Italian dressing and we had a baked potato with that,plenty left for sandwiches.
That's a staple in the summertime on our tables too!When I make it I don't measure but a little oil,white vinegar,salt & pepper and a little sugar with cukes,onions and tomatoes and bell pepper if I have them.

Tonight I baked a pork tenderloin,mashed potatoes and cooked carrots.
BakerAunt I use leftover dry lima beans,the meat that I've seasoned the beans is usually ham or ham hocks,if it's hocks I pick only the lean out for the soup.I use a little chicken stock with chopped up onions,celery,tomatoes and carrots.Boil that till the vegetables are done then throw in leftover lima beans
and if I have cooked rice I add that and let this simmer just a little,seasonings is salt,pepper and a little garlic.We love lima beans and this is what I make with the leftovers.I only had about 2 cups of beans left but after everything is put in it makes a small pot.It's just me and my husband so I've cut way back in the amount of food I use to cook.Today I cleaned out the fridge using leftovers to make lima bean soup.
Yes, strange to me too.I remember reading this awhile back but I don't think I'd do it.

Today I made Spanish rice with lettuce & tomato salad stirred up with mayonnaise and bread & butter.Thanks Chocomouse,today my husband ate a plate of macaroni salad for lunch-it's always better the next day really cold!
Today for supper we had cubed pork,lima beans,rice and tomatoes and cornbread muffins.It's super hot and humid here so I made cold plates,macaroni salad,tuna salad,pear salad,beets and deviled eggs, and crackers.Plenty of leftovers for later on.

Today we had fried chicken,left over squash and scalloped potatoes and I made fresh green beans with red potatoes.
Yesterday I picked up BBQ sandwiches & fries from a local restaurant.Today I made hamburger steaks with caramelized onions and baked potato.
Happy Father's Day to all the Dads and remembering our Dads that has past on.
We had what I call it Cheater chicken potpie,made by 1- 12oz.can of chicken breast drained,1-can of cream of chicken soup,1-can of peas & carrots drained and a large spoon of sour cream all stirred up and put in casserole dish topped with a thin layer bread crumbs and a little bits of butter scattered across (my husband doesn't like a crust)baked @ 375*for 45-50 min.Nice and easy for today.
