It was my birthday on Friday, so last week Will made a chocolate layer cake from Claire Saffitz's book, Dessert Person. He used her brown butter cream cheese frosting and added the chocolate from her chocolate version. It was really good - very, very chocolaty - one of my co-workers said he went into a chocolate coma (I had taken half to work). It was Will's first layer cake - he may have over mixed a little - the KitchenAid can need some getting used to.
This morning he made Sourdough blueberry pancakes on the Baking Steel on the grill. We used chocomouse's syrup and had Canadian bacon. yum!
He wants Claire's carrot cake for his birthday in two weeks.
I am so sorry for those of you who are having symptoms from your shots. That’s miserable. I hope you are all on the mend soon.
I had my 2nd Pfizer shot 3 weeks ago and while my arm was sore I chalk it up to the nurse. My first one was high on my arm (had to be my right since my left was recuperating from the surgery). The nurse was a nursing student at the local college, and I never even felt it touch my skin on the way in or out. Second shot was from a school nurse, I think it was lower and it was like she jabbed me - it hurt the minute it touched my skin. When I had my physical, my doctor said the majority of his patients had minor symptoms for both, some had more severe, but so far none really bad. One of his patients was in the Pfizer trial and found out she was given the vaccine (much to her relief).
I had one friend who was sure he was going to be really sick with his second, but wasn’t.
Be sure to drink lots of water before, They recommend not taking pain medication before the shot, but can after. After more water, ice and rest should all help, we were told.
Will says that's stupid - all you have to do is look at it - hah

Here in Coastal Georgia spring is being greeted with temperatures in the mid 50s and cloudy with wind. Will is heading out to transplant the tomatoes and eggplants.
They do look delicious!

Mike, I was doing fine while I was working, even on furlough I took long walks every day. But the last two months when I couldn't do much of anything, I would snack more and it was either bread and butter or triscuits and cheese😀
I meant to add above that I was surprised how empty the produce shelves actually were. Of course, I had read about all the shortages, transportation and production issues, but it was still a surprise anyway.
I had my physical on Thursday and discovered that I gained 5 pounds during my LOA. So as soon as I got home I made a nice breakfast, scrambled egg in avocado oil, a turkey sausage and some raspberries. I probably would have eaten peanut butter on Will's sourdough. So no carbs and desserts for me for a while. I went back to work full time/light duty on Tuesday, so not much cooking.
This morning I went to Harris Teeter for the first time in almost a year (My 2 weeks after 2nd shot is Tuesday) to get much needed vegetables. Some you just want to pick out yourself, although I must say the shoppers have done a pretty good job. I went at 7:30 thinking that the time change might help to keep people away - it worked. It was very quiet, only 2 other people in produce. And, it took less than an hour round trip.
We are having artichokes for dinner with homemade ranch and will fill in with proteins individually.
It was warmer there than in SE Georgia! I hope you enjoyed the day

I got my all-clear from the doctor to go back to work on light duty and I’m scheduled to go back after PT tomorrow. It is all healed, but now the hard work of strengthening my hand - I’m restricted by what my hand can handle and lifting no more than 2 pounds with my left hand, granted I can’t even lift 1 pound right now!

I made falafel and tzatziki to go with baked brown rice and leftover cauliflower roasted with Penzey's sweet curry powder.

I made a farro with greens from the garden last night, going to add tuna to the leftovers. Will’s on an Annie’s Mac kick for himself.
I made a batch of the No Knead Cheese Burger Buns from KAF. Will brought out the bread machine for me so all I had to do was dump the ingredients in - I just put the bucket on my scale and hit tare after each ingredient. After the dough cycle was done, I made the balls - a good hand exercise. We’ll have burgers tomorrow.
I subbed in a cup of sprouted wheat bread for some of the AP, used 2 teaspoons yeast instead of 2½ - I would have used less but for the sprouted wheat and used 3/4 teaspoon Penzey’s garlic powder instead of 1 teaspoon onion powder.
