Home from travels, back to baking, but leaving again tomorrow! Today I made the KABC "Bake of the Month" Brownie Cookies. It took forever to make, of course, since it is really just making choc chip cookies and brownies and baking them one on top of the other in a muffin tin. Making 2 recipes is time consuming. The only real problem I had with the recipe was the instruction to use a "generous" tablespoon scoop of the brownie batter; after I had filled about 10 wells, I realized I would not have enough batter for 24. Same with the cookie dough. Aside from that, they are ordinary flavor wise. However, I do not like to bite into a crisp cookie on a soft brownie. I won't be making these again.
I made two loaves of an oatmeal-whole wheat bread. I also baked up a couple dozen cookies that I had shaped and stashed in the freezer - chocolate with mint chips and lemon. I'll leave these for my husband while I am in Maryland for the week.
Our dinner tonight was salads - seafood, bean, and cole slaw. A poor choice for such a raw, cold, rainy evening, but planning is tight as I will be traveling again for the next week, this time to Maryland. I'll hopefully meet up with Skeptic again!
Today I'd planned to make Harvest Grains breads, using the KAF grain mix, but I couldn't find the mostly used bag of grains in the pantry, so I grabbed the bag of Super10 Blend. I used 3 cups of that, and 2 cups of AP flour, and added sunflower and flax seeds, plus some other odds and ends of grains and seeds. The rise was fine and it smelled great. When I returned the remainder of the Super10 flour to the pantry, I spied the bag of Harvest Grains sitting on another shelf among my boxes of Keurig cups! Oh, well, there's always tomorrow.
I also made a batch of cinnamon chip scones, sprinkled with cinnamon-sugar on top, in the mini scone pan. They smell wonderful and taste even better!
Saturday dinner here was ham, cheddar, and veggie omelets with English muffins.
I also designed our kitchen/house as our retirement home. Thus, it is not many steps between the three major pieces of equipment: sink, refrigerator, stove. Which means there is not nearly enough counter space! I have plenty of room for fixing meals, but not for baking. I sympathize with you.

I'm back from Michigan and not really into cooking/baking yet! So I made pizza for dinner.
Hi Skeptic! Sorry I'm so late in responding, but we've been teaching a dyeing workshop in Michigan and just got back Tuesday night. Yes! we will be at Maryland Sheep and Wool next week, and will have maple syrup with us. We're in the Main Exhibition Hall, first aisle on the left, A12. I look forward to talking with you again!
This is not good news BakerAunt! Although, if I needed to buy a new stand mixer, I would be purchasing an Ankersrum. I had a Cuisinart stand mixer years ago, but after it died, I did not buy another, and I still do not have a stand mixer. I use a hand-held GE portable that is about 40 years old for cookies, etc., and a bread machine for mixing and kneading bread dough.
The Chewy Semolina Rye bread is excellent - nice crumb and flavor. My husband likes the size of a slice, as it did not rise as high as most of my breads do.
Today I made KABC's Chewy Semolina Rye recipe for the first time. The only change I made was to use Rye Bread Improver instead of vital wheat gluten. It looks funny, not a smooth top, and doesn't have a strong rye odor. We'll cut into it tomorrow to find out about the crumb and flavor.
Dinner tonight was grilled chicken thighs, wild rice, broccoli, and leftover orzo salad.
We had salads for supper - seafood, broccoli, and orzo with tuna, celery, onions, green pepper, carrots and Italian dressing. After 3 days of temperatures around 87 degrees, the 77* today was perfect for starting to clean up the rock garden, enjoy a margarita on the deck, and have salads ready to eat.
