      DESCRIPTION
      Mennonite Gingerbread

      SUMMARY

      INSTRUCTIONS
      1/2 cup shortening
      1/2 cup sugar
      1 egg
      1 cup dark molasses
      2 1/2 cups all purpose flour OR 2 3/4 cups cake flour
      1/2 teaspoon salt
      1/2 teaspoon soda
      1 teaspoon baking powder
      1 1/2 teaspoons ginger
      1 teaspoon cinnamon
      1 cup boiling water

      Cream shortening, add sugar gradually and beat until fluffy, add egg and beat well, add molasses and blend into mixture
      Sift flour, measure and add salt, soda, BP, and spices. Sift again and add dry ingredients gradually to mixture. Add boiling water and stir until batter is smooth. This is a thin batter. Pour into waxed paper lined pan 8 x 10 x 2 inches bake at 350 for 35 to 40 min.
