      EGGS- Baked Scrambled Eggs for 100

      15 dozen eggs
      1/2 gallon heavy whipping cream
      2 pounds unsalted butter, melted and cooled
      5 tablespoons AP flour
      1 tablespoon salt
      2 tablespoons pepper
      4 pounds cooked ham, minced
      4 super sweet onions, 1/4 inch dice
      5 red peppers, 1/4 inch dice
      5 green peppers, 1/4 inch dice
      5 pounds shredded cheese (suggest mixture of jack and cheddar)

      1. Crack eggs, mix with salt, pepper, flour and cream.

      2. Add flour to melted, cooled butter and mix - add to eggs.
      NOTE: Mixture may be held 24 hours at this stage

      3. Saute peppers and onion until tender-crisp.

      4. Spray 5 shallow hotel pans with pan spray.

      5. Layer ham, peppers, onions, cheese in pans.

      6. Pour egg mixture over ham and veggies.

      7. Bake in a 350 degree oven for 70 minutes.
