      Applesauce Doughnut Holes

      oil for frying

      2 1/4 c sifted flour
      1 1/2 tsp. baking powder
      1/2 t soda
      1/2 tsp. cinnamon
      1/2 tsp. nutmeg
      1/4 tsp. cloves
      1/4 tsp. salt
      1/2 c granulated sugar
      1/4 c firmly packed light brown sugar
      2 eggs
      2 Tbsp. oil
      1//4 c milk
      1 c unsweetened applesauce
      1/2 tsp. vanilla

      1. Fill large heavy saucepan or electric skillet 2/3rds full with oil. Heat to 360 degrees on deep-fat frying thermometer.

      2. Sift together flour, baking powder, soda, cinnamon, nutmeg, cloves and salt onto piece of wax paper.

      3. Beat together granulated sugar, brown sugar, and eggs in large bowl with electric mixer at medium speed until fluffy. Beat in the 2 Tsp oil. Stir in flour mixture, alternately with milk, beginning and ending with dry ingredients, until well blended. Stir in applesauce and vanilla.

      4. Carefully drop batter by level tablespoonfuls, 3 or 4 at a time, into hot oil. Do not overcrowd pan or oil may overflow. Fry, turning once with tongs, for 3 minutes or till golden. Transfer with tongs to paper toweling to drain. Cool completely. Sprinkle with confectioners' sugar.
