      Adobo

      2# pork or chicken cut into 1" cubes
      1/4 c vinegar
      1 c water
      small amount of salt
      1/2 tsp. pepper
      2 bay leaves
      pinch of cloves
      1 chopped medium onion
      5 smashed garlic cloves

      In frying pan sauté onion and garlic till translucent. Add rest of ingredients including meat and marinate all overnight. In heavy covered frying pan simmer meat with marinade till tender--about 30 minutes. In another frying pan, brown meat in 1 Tbsp. butter--reserve marinade. Add 2 T soy sauce and the reserved marinade back to meat or poultry. Serve hot over rice. This can be grilled over an open fire when camping.

      This recipe is authentic and was given to me by a Filipino woman over 20 years ago when I was living in Germany. It has an odd method of cooking but it works and it's delicious. Cheryl
