I made a fish casserole for dinner tonight - crab meat, "chowder fish" on sale at the local market, and a can of cream of shrimp soup, topped with crumbled saltines. Simple but tasty, and quick to prepare.
I made two loaves of buttermilk oatmeal wheat bread this morning.
November 26, 2022 at 6:22 pm in reply to: What are you Cooking the Week of November 20, 2022? #37245Dinner was a repeat of Thanksgiving dinner, warmed up leftovers. Just as tasty as the first time around.
Yesterday I made two 7" cheesecakes. One regular cheesecake recipe (32 oz cream cheese, 4 eggs, etc) fits perfectly into them. I made one with a filling that was flavored with raspberry liqueur, a chocolate graham cracker crust, a layer of filling, a layer of individually frozen raspberries, a drizzle of chocolate ganache, another layer of filling, and topped with ganache. The other one I flavored with lemon and lime juice. One of these will go into the freezer for a future treat.
November 23, 2022 at 6:19 pm in reply to: What are you Cooking the Week of November 20, 2022? #37231I had a green salad, and my husband had baked beans and hot dogs for dinner. I told him he had to finish up the apple pie I made the other day because I need the pie plate for the pecan pie I'm going to make tomorrow. He didn't buy that, he knows I have plenty of pie plates.

I made an apple pie this morning. I've been really sick with a lung infection for 5 weeks, so standing in the kitchen for over an hour to make it was a challenge, but it shows that I am finally making progress and getting better.
November 19, 2022 at 6:32 pm in reply to: What are you Cooking the Week of November 13, 2022? #37189I'm waiting for the usual holiday baking goods sales - nothing here yet. On a good note: KABC has just announced a "retail store sale" of 15% off $60 or more! Almost all of their sales exclude retail store sales! I need to work on my gift list to see what I might want to buy.
Dinner tonight was tomato soup from the freezer, with blueberry muffins hot out of the oven. Tomorrow we are going to our son's home for Thanksgiving dinner; he is smoking a turkey. I'm really looking forward to this as their three children and significant others will be there also.
November 18, 2022 at 6:15 pm in reply to: What are you Cooking the Week of November 13, 2022? #37183Dinner tonight was venison liver, panfries, onions, and cole slaw.
There is a large hydroponic tomato farm a mile down the road from us. The tomatoes are beautiful and delicious! Almost as good as garden ripened tomatoes.
November 17, 2022 at 6:23 pm in reply to: What are you Cooking the Week of November 13, 2022? #37177Pizza for dinner. Used up some of the VT Cheese Powder!
I made Len's semolina- rye. I shaped it into a dozen buns to have with soups this winter, and one nice loaf of bread.
November 16, 2022 at 6:34 pm in reply to: What are you Cooking the Week of November 13, 2022? #37171We had grilled salmon, mashed buttercup squash, and a green salad. This was our first winter squash from last summer's garden. It was delicious and I'll have plenty to freeze.
November 15, 2022 at 6:36 pm in reply to: What are you Cooking the Week of November 13, 2022? #37161Dinner tonight was a repeat of a meal 2 weeks ago: breakfast sausages, sauteed apple slices with maple sugar and cinnamon, cole slaw, and corn cakes (with fig jam on mine). I could eat this once a week during cold weather. They are predicting 3-5 inches of snow here overnight, our first of the season.
I store all nuts, including pecan meal. in the freezer. But I guess I should check the meal before I use it. Thanks, Mike.
