I didn't cook anything -- but my husband cooked his own bacon for a BLT. I had a tomato sandwich, on whole wheat-semolina bread.
Thanks for doing the quizzes, Mike. You deserve a break! I've learned a lot, but certainly don't need one every day.
BakerAunt, half shelves are a terrible waste of space! After 30 years in our house, my husband built slide out drawers in place of both the top and bottom shelves in my biggest pair of cabinets. We thought about having those when we had the house built, but they were quite expensive, and having splurged on high-quality cabinets, we needed to cut some of our costs. Now, I can fit more stuff in the cabinet, and easily see and retrieve what I need. Maybe you could consider replacing your shelves with drawers.
Baker Aunt, I hope the sprained ankle is not keeping you from your appointed rounds!! I'm sure you've figured out ways to continue moving about your kitchen.
Our dinner tonight was Italian sausage with spicy brown mustard on split focaccia which I had made earlier, and corn on the cob. I have plenty leftover for lunch tomorrow.
I also made another batch of refrigerator bread and butter pickles. These are really good. I learned a new trick: do not boil the cucumber slices with the pickling brine. Just put the sliced cukes into a mason jar, pour the hot brine over them to fill the jar, cover, and refrigerate when cool. They stay nice and crisp.
Today I made 2 loaves of whole wheat sandwich bread, using up the last of my European Style Flour from KAF which I rarely use.
I also made a focaccia, the first time in ages. I put Herbes de Provence in the dough, use garlic oil on the pan and drizzled on the top, and also sprinkled the top with coarse sea salt, and rosemary and thyme from my herb garden. It is fabulous.
I'm trying to talk my husband into getting a Tesla battery back-up for our house, but he is hesitant since it will cost around 14,000. We reaching the age that we will not recoup any long-term investments like that. My son and my sister have Teslas, and love it. They both also have solar panels, and they "sell" the excess electricity those generate back to the power company, and the power company "reserves" power for them during an outage. They don't even realize when they have switched from the traditional power onto the battery back up, unless they check their iPhones. Because we get a lot of sunshine in this area, they end up paying almost nothing for electricity.
That looks like my Aerogarden, Mike. I love it in the winter season for growing herbs, and the light brings a little sunshine into our shorter and darker days. I'll have to look it up - I've been thinking about getting another Aerogarden. Does he like it? And what else is he growing?
BLTs - the first 2 regular size tomatoes (Celebrity) from the garden, after 2 teeny 1.5" diameter tomatoes. So good. The lettuce is from my 3rd succession planting, the 4th planting is just sprouting now.
Mike, I use the burger bun pan often for individual sized tarts and pies. I take them out of the pan, freeze them on cookie sheets, then wrap in plastic wrap and put in zip-locks. A nice stash for my husband! I am going to make the Irish Apple Cake soon; it sounds really good, and I found the recipe on line easily.
Today I made peach muffins, based loosely on a recipe from Mrs M on the obc. Tomorrow I'll use the same recipe to make raspberry muffins for a potluck. I freeze the berries separately so they don't mush and fall apart when folding them into the dough.
I also made chocolate chip cookies. I'm leaving for Maine tomorrow for a week, so I'm done baking and cooking for a while.
We did the same, and I do use a walker when I'm out, but not in the house.
Thanks for the ideas, Mike. I might try making small tarts in the burger bun pan. I also have a tart pan that I recall is about 5 x 10 or 12" that might work. I'd have to do a little math first!
We designed our house for retirement, so it has a fairly small, efficient kitchen. I do have a separate walk-in pantry, and a large "shrunk" (we brought back from Belgium; it's like a huge china cabinet, 3 meters long, and about 2.5 meters tall) so I have plenty of storage space. But with all the baking I do, I'd love to have more counter top footage. I'm sure you'll get a lot of use out of your new space!
We ended up not getting much of a storm at my house. Heavy winds, no trees down, lost power for 5-10 minutes, about .38 inches of rain, not nearly enough to help the drought. However, some sections of town had many trees and power lines down. We were lucky.
We had chicken burgers, broccoli salad, and cukes.
That does look good! I've been looking at peach recipes today. I have peaches to use up before I leave town on Wednesday, but I have only 3 peaches, which isn't quite enough for much of anything. I'm figuring diced and use in scones or muffins, but probably not enough for a tart or cobbler.
