My husband drove my stepdaughter to the airport in Indianapolis late this morning. Early this evening, my younger stepson drove in from Colorado. I was not sure when he would arrive, so I planned an easy dinner of salmon patties, with sweet corn (still available!), leftover quinoa salad, and multigrain crackers.
September 12, 2021 at 6:36 pm #31369We had shrimp tacos for dinner. It's the first time I've used soft corn taco shells, and I was so disappointed. They completely fell apart as soon as you touched them -- just crumbled, no way you could fold it in half or pick it up. I don't know if this is typical, or did I get an old, stale package of shells? I think I won't be buying any again, but will use my masa harina to make them. Has anyone had a similar experience?

September 12, 2021 at 10:30 pm #31374Len, there were soft corn tacos, not the hard shells, not the crunchy kind. They are more than pliable - they are soft, very thin, and simply fell apart. Is that the kind you are talking about too? I'll take a picture tomorrow and post it.
September 13, 2021 at 9:18 am #31375I looked up "soft corn tacos" on Google - yes, everyone seems to be saying they need to be lightly fried before using. That will prevent them from falling apart or cracking. It does not say anything like that on the bag, and I had not read it anywhere when I was looking at recipes using corn tacos. I'll try frying some later today and see what happens. Unfortunately, the makings for the shrimp tacos are gone - we ate them like a salad.
September 13, 2021 at 5:29 pm #31377Tonight we had pork chops that I brined first,made a rub then put them on the smoker,when they were done I sprinkled with white vinegar smothered them in BBQ sauce then wrapped up in foil for 20 min and they were good and tender.I made fresh coleslaw and baked beans on top of the stove,it was all good.

This afternoon I processed the tomatoes that I picked several days ago, after throwing out quite a few of them, then picked enough that I was able to make 5 full quarts of tomato juice, which are in their water bath now. At the rate my wife is going through tomato juice right now, these will be gone before Thanksgiving.
If the weather holds up, I may be able to process another batch of tomato juice by the weekend or early next week, but that might be the last big picking. (Weekends are kind of busy right now with football season and the usual fall house tasks, I may just wait until next Monday to do anything.) The tomatoes are definitely winding down, and I keep hearing calls for an early frost.
September 14, 2021 at 4:47 am #31380I processed 4 quarts of tomato sauce with peppers and onion, for the freezer. I think I'll have enough tomatoes for another 4 quarts when I return from Maine next Monday. I still have some peppers to freeze, but everything is slowing down with the cooler temperatures. Today I pulled up most of the green, yellow, and purple beans, and some of the summer squash and zucchini. My husband is picking 4-5 quarts of raspberries every other day. The deer are here morning and night to eat the apples that have fallen to the ground, so it is time to make cider. Summer 2021 is over!
September 14, 2021 at 6:58 am #31381On Monday, I cooked a few of our tomatoes that needed to be used quickly to make pizza sauce. If the weather cools a bit, we may have pizza later in the week. Otherwise, I will freeze it.
We are still having warm weather here, and we could use some rain again. The changes we see in the garden are due to the shortening days.
September 14, 2021 at 9:55 am #31382WE had leftover beef tenderloin strips stir fried with broccoli, onions and peppers served over ramen noodles. The price of beef has since skyrocketed!
September 14, 2021 at 6:44 pm #31384Dinner on Tuesday as my adaptation of a Martha Stewart recipe for shepherd’s pie that I worked out some years ago. It was a good way to use up leftover mashed potatoes for the topping, and a bit of leftover gravy in the filling, which I made with ground turkey, some green onion, a bit of garlic, a cup of broth from the freezer, sliced mushrooms, and mixed vegetables. I was able to use the countertop convection oven, so I did not heat up the house. We had some sprinkles of rain this evening, so it is supposed to cool down a bit tomorrow.
September 14, 2021 at 6:52 pm #31386Our dinner was a white vegetable lasagna and grilled kielbase. I used zucchini, yellow summer squash, mushrooms, carrots, sweet red peppers, and red onion.
