I made two cakes today for my friends. One was the coconut cake with cream of coconut poured over with a Cool Whip icing with coconut on top.One friend wanted a pineapple cake so I found a recipe I tried looks good and easy . Both were made from box cake mix. The name of pineapple cake is Pineapple Sunshine Cake it's gonna be a keeper for me. I haven't tried it yet but I know I'll like it.

I had a chef salad today. I've been busy in the kitchen today. I cooked a large pan of sweet potato soufflé for my sister in law and she will top it Thursday am with mini marshmallows after it's reheated. I made 2 cans of pickled beets for my friend.

I have baked a turkey upside down before and yes, makes it moist but I didn't bake it at a high temp.Wasn't the prettiest but sure was good.

I had a sandwich and fruit tonight.My plans for Thanksgiving I will go to my friends, I'm making garden pea salad, pickled beets, corn bread muffins and a coconut cake.I have lots more cooking I will be doing for others.

Yesterday I had 2 hotdogs on bread before I went to poker and today I had a steak with baked potato and sautéed onions and peppers.

I had a salad with fruit and a brownie from my neighbor.

I made another Spicy Applesauce Cake for poker night tomorrow, we didn't get to play last Friday so I made it again.

Tonight I had hotdogs with pickles and yogurt.

Repeat form yesterday sandwich and corn on the cob.

The way I make Watergate salad is
2- small pkg. instant Pistachio pudding mix dry
1-20.oz.can crushed pineapple undrained
1/2 of 1 lb. bag mini marshmallows
1-16oz.of cool whip or whipped topping
In large bowl add crushed pineapple and pudding mix dry mix well, add cool whip and marshmallows stir well that's it but so good.It makes a big bowl full.

I made the Dark Fudgy Brownies and yesterday I made the sourdough bread again for my niece tomorrow. I made a double batch and upped the starter to 162 grams . I mixed it up at 3pm yesterday and usually it'll sit on the counter overnight but when I was going to bed last night I looked and both batches was spilling over the top. I didn't know how it would do if I panned it up and put in the fridge so I got both batches panned up at 11pm and I waited till they rose an inch over the pan baked them and I went to bed around 2 am . I baked one in a 8x4 then split the other batch in a 8x4 and one tinfoil 8x4. I loaf was 2 pounds and the split recipe made 2 one pound loaves short and small the regular one was 5 inches tall at tallest part.These were all white bread. I baked another Spicy Applesauce Cake for her too.

I went to my friends for a cookout, we had hotdogs and chili with chips and all the trimmings. I made brownies and Watergate salad.
