We had shrimp alfredo on farfalle with broccoli.
Today I baked 2 dozen of the molasses cookies I mixed, scooped, and froze in December.
Tonight we had Greek-style chicken thigh, carrots, and cauliflower salad.
I made cheesecake today. I used a regular sized recipe, but divided the batter in half for two 7" springform pans. They both had a chocolate graham cracker crust. One filling was vanilla swirled with frozen raspberries from last summer's crop. It's in the freezer for later, and I will put a chocolate ganache on it when we're ready to eat it. The other one is chocolate with chopped candied orange peel swirled into it. We've cut into it, and I didn't get much of an orange taste from the chunky little peels.
I had a tuna sandwich and my husband had a roast pork sandwich.
I cooked a pork loin roast, with potatoes, carrots, and onions in the same pot. I made au jus with boiled cider, chicken broth, and Herbes de Province.
For lunch today, I heated up leftover bulgogi bibambap, and decided next time I make it, I will double my recipe so I have more leftovers. We had tuna fish sandwiches and potato chips for dinner.
For dinner tonight we had frozen, breaded fish fillets, mashed butternut squash from the freezer, and corn-bean salad.
Our dinner tonight was omelets and English muffins.
I'm so sorry to hear that,Kimbob. Hopefully he'll get great care and recover quickly. Eat your ice cream, and take care of yourself.
I just put 2 loaves of Vermont Whole Wheat Oatmeal Honey Bread (KAF) into the oven.
Happy Birthday, BakerAunt! Spend the day baking one of your favorites, maybe with just a bit of butter?
Today I made a pan of Pecan Pie Bars. They are OK, but I think next time I will use my regular pecan pie recipes, from the Karo bottle. The bars are sadly lacking in pecans, and thus, also sadly lacking in flavor. I knew that as I mixed the filling, but, as usual, the first time around I followed the recipe. But the recipe was easy to make, and the crust is excellent.
Leftover corn chowder and rolls here.
Kimbob, I didn't know where you live! Yes, I go to NY Sheep and Wool every year! My sister is a vendor; she hand-dyes fine wools, and we travel to festivals across the US. We should meet up there next October! We'll be in our usual spot, Barn 26, Ellen's Halfpint Farm.
I've made potato salad, three-bean salad, and cowboy salad to go with a ham steak for dinner tonight. We've had three days in a row of sleet and freezing rain and snow. We used to get just snow storms, icing was rare. Mother Nature is on steroids!
