March 26, 2026 at 6:55 pm #48897We had leftover chicken thighs with leftover orzo, mushroom, kale combination for dinner on Thursday. Annie was glad to get some chicken, as her nerves were frazzled by a couple of loud thunder bursts in the later afternoon. We may have more storms this evening. We need the rain.

I call this one a Christmas Tree Meatloaf.

Today is my birthday and I received lots of birthday wishes at work. Will will be here on Tuesday for two weeks to help while I recuperate from my reverse shoulder arthroplasty next Thursday (long hand for shoulder replacement surgery). He's looking forward to being back in my kitchen and he'll make a joint birthday cake as his birthday is April 11th. I won't be cooking for a while

My husband had a reverse total shoulder replacement in 2017. He slept in the recliner for a while because it was too uncomfortable in bed. Good luck and I hope it turns out well.

March 27, 2026 at 1:40 pm #48913Yeah, Mike, looks delish. I like a cold meatloaf sandwich with lots of ketchup. My grandfather always told me that to put ketchup on food was an insult to the cook. Lol. I'm a ketchup addict.
I'm having a grilled cheese sandwich tonight. I know it sounds strange, but my mother always put cinnamon sugar on top and that's how I still eat it.

March 27, 2026 at 4:50 pm #48918I'm also a fan of cold meatloaf sandwiches, sometimes with mayonnaise if I have used tomato sauce in the meatloaf. I have not had one for years, as Scott is not fond of ground beef meatloaf, which I used to make all the time. He will eat turkey loaf, but there is never any left for a sandwich.
March 27, 2026 at 8:31 pm #48921Thank you BA, kimbob and Joan for the birthday and well wishes for the surgery. Kimbob, I did not want to get a recliner just for the surgery, and my doctor said I could just pile up pillows at a 45 degree angle in my bed. I found a large wedge pillow at the company store on sale which will be great for my main support. I have one advantage from being really sick with asthma when I was a kid - I've had to sleep upright a lot so it's not as much of an issue as it is for some people.
I do love a cold meatloaf sandwich too with mayo AND ketchup😊
March 27, 2026 at 10:31 pm #48922For dinner on Friday night, Scott had the last chicken thigh and the rest of the orzo with mushrooms and kale. I had the other half of the stuffed acorn squash that I made a few days ago.

March 28, 2026 at 7:21 pm #48930Mike's meatloaf picture and the ensuing discussion reminded me that I had not done a turkey loaf for a while. With that inspiration, I made a "garden" turkey loaf for Saturday's dinner. The recipe comes from the Quaker Oats site and uses frozen spinach. I replaced grated carrots with chopped red bell pepper and some chopped celery. I used Penzey's Mural of Flavor in place ofe Italian Seasoning, in deference to my husband and use dried onion. I added an additional ¼ cup of quick oats as well as 2 Tbs. flax meal. We had it with potato chunks tossed in olive oil and roasted. Dessert was blackberry brownies.
