June is busting out all over!

I'll be baking cookies this evening.

I baked Whole Wheat Sourdough Cheese Crackers on Sunday from dough I made last week. My husband finished the last batch of crackers at lunch, so my timing is perfect.

I made a loaf of whole grain banana bread using the roasted bananas from KABC. I had bananas that were halfway between ripe for eating and overripe. As I didn't have time to let them go to overripe, I decided to try the roasted ones. I really like the amped up banana flavor and the moistness they added. Tomorrow I will slice the rest and freeze it.

I made 2 batches of oatmeal crisp cookies with chocolate chips and one batch with M&M's, a total of about 200 cookies.

Divided then up into 5 containers, one for each of my brothers, one for my son & family, one for us as road food and one for the guys who will be house-sitting for us while we're out of town.

On Monday, I baked another batch of Big Lake Judy's Best Ever Molasses Cookies so that we will have them for teatime and for snacks.

I did another pepperoni pizza with mozarella and chedder cheese and pepperoni. No tomato sauce. I can't use up a jar before it spoils and don't have enough room in the freezer. Its making a nice savory snack and meal substitute for hot days.

We were down to our last slice of bread, so on Wednesday, I baked three loaves of Whole Wheat Buttermilk Oat Bran Bread. Two will go into the freezer.

Skeptic--If you have some tomato paste, you can mix it with some water and some seasonings for an improvised tomato sauce. I have also used Muir fire-roasted tomatoes (15 oz. can) and cooked them down in a pan in which I first heat some minced garlic in a bit of olive oil. In fact, that is the pizza sauce I make when I do not have any fresh tomatoes or frozen in the freezer.

BakerAunt; Your pizza sauce ideas sound good. I'll keep them in mind for next time. I like the idea of Muir fire-roasted tomatoes.

I did potato rolls with raisins yesterday. Nice and light and the raisins keep it from being too boring.

I was not planning to bake on Thursday, but we made a last-minute decision after dinner to go hiking in the Indiana Dunes tomorrow. So, after dinner, I baked my riff on Ellen's Buns as twelve rolls, and I also baked a double recipe of Soft Oatmeal Cookies. That way we can enjoy a picnic lunch at the park. Any leftover cookies and rolls can go with my bonus son who will begin his drive back to California on Saturday. I'm glad that these two recipes come together quickly., but it still made for a late night in the kitchen.

I made maple granola on Friday. We ended up not going to the Indiana Dunes after all, because the air quality was poor today due to the smoke coming from fires in Canada.
