Tonight we had a pork roast with potatoes, onions, and carrots all cooked in the tagine, and a side dish of steamed asparagus. I cut extra asparagus, about a quarter of our two rows, and will freeze the excess for a meal next winter.
My husband hates it when I have a jigsaw puzzle going!! He knows there just might not be any dinner! Tell you husband that burned is better than none; although I guess he might disagree.
When we lived in Germany, I remember helping some German friends, farmers, harvest these in the fall, to feed to some of their animals. Cows? Pigs? I don't remember. They also ate them boiled or thinly sliced in salads. I did not like them, so never cooked with them.
Dinner was chicken breasts, Greek salad, and cheesy-olive rolls.
We had the first meal of asparagus from our garden, with baked potato and salmon on the grill.
I made the Oatmeal Chocolate Chip cookies that were KAF's recipe of the year a few years ago, my first time making them. The flavor was fantastic, but I didn't like the texture - they didn't spread at all, and seemed dry. They were brown on the bottoms (bottom element was replaced) but a pale white on top. I have the new element in my oven, but not sure it is working right, although maybe it is just my perception as the old element might have been failing over time, giving me odd results. My hamburger buns and bread, baked on different days, were pale, although I followed the usual recipes. The scones were way over cooked, top, bottom, and middle. Guess I'll just have to keep baking more to figure this out.
Meatloaf, baked potato, and squash. I'm off to another sheep and wool festival tomorrow morning, so leaving my husband with his favorite leftovers! Plus cookies!
Finally back in the kitchen after eating out for a week! I made Greek chicken thighs, white rice with minced onion, orange peppers, and carrots, and candied carrots from the freezer. My cooking skills are rusty - when I thought the meal was ready, I found the chicken meat very red near the bone, and the rice was burned a bit! I turned up the heat under the chicken for another 10 minutes, and the rice turned out OK, a little smoky flavor, but not real burned as I didn't scrape the bottom of the pot!
It was great to meet and chat with Skeptic at Maryland Sheep and Wool, although I was a little busy helping my sister manage sales at her booth. On Saturday, Skeptic brought me some delicious apple challah bread, which had a nice flavor, subtle flavor. Then, on Sunday, she returned with the whole wheat English muffins, as she knew from my postings here that I had been struggling to get a good recipe. Skeptic, I'm sort of glad you did more baking than knitting - fiber in baked goods tastes a lot better than the fiber in hand-dyed yarns!! We'll be back there next May, and I hope we can meet up again. I can't share my baked goods, since we leave here by 7:00 Wednesday morning, and they would not be very fresh by Saturday, but I can find some baking supplies at KAF!
Sausage and blueberry pancakes for dinner!
Tacos for dinner!
No baking in this house for at least a week, probably more, as we await the appliance guy and then I'll be out of town. I did make English muffins yesterday, using the griddle.
Dinner tonight was sliced Kielbase with sliced potatoes, onions, and sweet peppers cooked in a cast iron skillet on the stovetop. We also had a three-bean salad with onions and peppers.
Today I baked bread and a carrot cake (from a mix I found in the pantry; no idea where it came from or why I have it! My husband says even the cat won't eat it, but would love to eat the cream cheese frosting!) Then I made pizza for dinner and the fun began. I put it in the pre-heated oven at 375 for 25 minutes. That yielded a warm but white, soggy, yeasty, doughy crust. I upped the temp to 425 and set the timer for 10 more minutes. No change! So between the toaster oven (which did bake the dough through, but not a crispy crust) and the Jennaire griddle (which did not bake the dough quite through, but did make a crispy crust) we finlly ate pizza. And then called the appliance repair man. The Jennaire is 34 years old, but I'm hoping we just need a new element or something else simple and quick. I'm going away next week, until May 8th, and my husband is worried he won't have a stash of chocolate chip cookies to snack on. I told him he'll just have to go to the store and buy Oreos!
Dinner tonight was turkey-veggie soup, using up some veggies from the freezer. With it we had bacon-cheddar-chives biscuits.
