Ham sandwich and strawberry trifle.
April 7, 2024 at 5:16 pm #42338I roasted two large bone-in chicken breasts for Sunday night dinner. I roasted potato chunks tossed in olive oil separately. We also had microwaved green beans. We will have leftover chicken for tomorrow, which will make for an easy dinner, as we plan to drive to see if we can view tomorrow's total eclipse.
I'm wondering if Chocomouse lost power at their house after that big storm.
April 7, 2024 at 6:59 pm #42339We did not lose power in any of the three storms, each of which dropped a foot of snow, or more on us. We live about a mile from a major electrical station, so if there is power outage, we are about the first to get repaired. I hope you do get to see at least some of the eclipse, BakerAunt. I suspect your viewing might be similar to ours -- we live at the 98+% range of total eclipse. Traffic is already impacting travel around here,and worse is expected. We have experience - the Phish concert in a farmer's field happened north of us, years ago. I'm not leaving my house! I'll be watching from my deck.
Today I made sauce from last summer's tomatoes, and we had some on pasta and some went into the freezer. I've been baking focaccia to use for ham sandwiches to use up the Easter ham. I've been slowed down by some major vision issues for the last couple of weeks. I'm blind in one eye, due to my stroke 7 years ago, but I lost vision in my good eye. After several visits to some physicians, my retina specialist diagnosed and treated it, and I am now back to normal. But it was scary.
April 7, 2024 at 7:06 pm #42340We're in the 80% band for tomorrow's eclipse, but we were in the total eclipse area for the one a few years ago. And the weather cleared up about an hour before the eclipse started, so we had excellent viewing conditions for that one. Some friends of ours from Wisconsin drove out and watched it with me in our back yard. Diane was at work, but UNL let most of the staff and students go outside for it.
Tonight we had tuna fish salad on a bed of lettuce, plus some mushroom soup.
April 8, 2024 at 8:44 am #42341I had some left over curry sauce from TJ's. I sliced one large chicken breast, sprinkled it with s&p and Penzey's Arizona Dreaming . I stir fried a little onion, soaked dried mushrooms, the chicken strips with the curry sauce and some corn niblets. Husband had seconds.
April 8, 2024 at 6:17 pm #42342It was a six-hour round-trip, but we saw the eclipse and witnessed the corona during the full phase. It was worth it! We did not have much traffic on the way there, probably because my husband is a Google map fanatic as well as an expert on Indiana rural roads. We avoided the towns and watched from a school parking lot southwest of Warren, IN, with only two other cars at that site. The drive back had more traffic, especially with one four-way stop, and one place where we were on the road with the stop sign. Traffic backed up at both locations, but it was not that bad. On the highway driving back, there were a lot of people returning to South Bend and Michigan, which meant lots of people driving in the passing lane.
We arrived home just in time for a dinner of microwaved fresh broccoli and roasted chicken breast.
April 8, 2024 at 7:34 pm #42343I made two related pizza recipes out of "The Wicked Good Ketogenic Diet Cookbook" by Amanda Hughes tonight.
One used a mozzarella crust, which I made by putting a cup of shredded mozzarella cheese in a 6" ring (2 cups for an 8" ring) and putting it in a 400 degree oven to melt and brown around the edges and on the bottom. Then put a little tomato sauce on it and sprinkle it with oregano and some Parmesan cheese. I also put a few mushrooms and a few thin slices of tomato on them. Put it back in the oven or under the broiler for a minute or two.
The other recipe used a slice of Genoa salami or pepperoni as a base, with sauce, mozzarella and any toppings, then put it under the broiler long enough to melt the cheese.
We liked the mozzarella crust one better, so I made a second round of them, another 6" one and an 8" one. I probably didn't leave them in the oven long enough and then I put too much toppings on them, so they were a bit sloppy to eat, but still tasty. We had enough left over for Diane's lunch tomorrow.
Total carbs were probably 6-8 carbs for the 6" one, 16 for the 8" one and 1-2 carbs each for the ones on the salami or pepperoni.
I'm sure we'll be making the mozzarella crust one for supper again, and I could see making the pepperoni or salami one as a quick lunch for me.
BTW, the Walmart deli has a 'sandwich pepperoni' that has no garlic in it and is just a bit spicy not overpowering.

April 9, 2024 at 11:29 am #42345We had haddock using BA's crispy fish recipe. It didn't take long to bake and it was very tasty. I used fresh dill. Both the dried dill and fresh dill are quite pricy but then dill is the star in the tartar sauce!
April 9, 2024 at 7:20 pm #42346I'm glad that you enjoyed the crispy fish, Navlys. I told my husband, and he said that when he was in England, when he had fish and chips, he always chose haddock. I would try it, but we are not close to any place that carries haddock.
Our dinner on Tuesday was chicken salad sandwiches. I made the chicken salad in the morning, from the remaining chicken breast meat, as we would be gone most of the afternoon and arrive home at dinner time. Fortunately, I still had two WW/Rye/Semolina buns in the freezer that I defrosted to use.

April 10, 2024 at 2:59 pm #42349I'm so glad you got to see the eclipse, Mike and BakerAunt. It was terrific. We had about 98+% totality, but that wasn't much different from one I saw quite a few years ago. Best of all, it was a gorgeous, sunny, warm, spring day and I did not have to leave my deck to refill my margarita glass. Many visitors to our state had to drive 12 or more hours to make the usual 2-hour drive home.
