I made Cinnamon bread for the first time in awhile it was the recipe from the KAF .I made it my own recipe as I used left over mashed potatoes about a half cup instead of flakes,used brown sugar instead of white in the bread,I did like you suggested Mike in soaking the raisins in some rum and poured rest of rum off raisins in batter,used half milk and half water in the with the brown sugar and yeast time I finished I had to put another half cup or more of flour in and I also put a tablespoon of cinnamon in the bread and added an egg.The recipe states to use a 8x4 but I had a good bit of dough so I went with 9x5.When it rose up and I kneaded it and put the cinnamon sugar flour mixture on it it looked really big so I divided in 2 pans 9x5.It rose up really nice to top of pan and when baked looked good.Let it set just a few minutes before turning out and I guess the weight made it sink,it's like 3 inches tall but I'm not complaining it tastes very good and moist.Gave one loaf to my sister and mine is half eaten already.Baked a chocolate cake Sunday my husbands favorite.
I baked a pork tenderloin,had rice and green butter beans and we had sandwiches with the left over tenderloin,so tender I love it.Cooked greens,potato salad and corn bread and fried pork chops last night.I'm thinking spanish rice tonight with a green salad.
Happy 50th Anniversary to S.Wirth and husband a real test of time.Congratulations,that's a lot of taking and giving but so well worth it!We'll be 46 yrs. in September.

I've made Spaghetti and meat sauce Sunday,Ham,macaroni and tomatoes,corn and garden pea salad Monday,Yesterday I made Spanish rice with bread and butter and Banana Pudding the original way my mom always made it with meringue on top...so good.
So far this week I've made chicken pot pie out of left over baked chicken and tonight we had Fried ham with rice and tomato gravy and garden pea salad.
Sunday I made Lima bean soup out of leftover lima beans.Today I cooked buttermilk pancakes for breakfast and pork tenderloin,mac-n-cheese,and pole beans for supper.
Heck yeah,ya'll come on.We'll have coffee or tea and cake.Love to do some front porch sitting or swinging!We use our front porch a lot! People wave or toot the horn!
I baked these Banana Bars but baked 2-8 inch layers and it was very good and moist.This recipe is from Taste of Home:Debbie Knight,Marion,Iowa.
Banana Bars with Cream Cheese Frosting RecipeTOTAL TIME: Prep: 15 min. Bake: 20 min. + cooling MAKES: 36-48 servings
Ingredients
1/2 cup butter, softened
1-1/2 cups sugar
2 large eggs
1 cup (8 ounces) sour cream
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking soda
1/4 teaspoon salt
2 medium ripe bananas, mashed (about 1 cup)
FROSTING:
1 package (8 ounces) cream cheese, softened
1/2 cup butter, softened
2 teaspoons vanilla extract
3-3/4 to 4 cups confectioners' sugar

Preheat oven to 350°/ In a large bowl, cream butter and sugar until light and fluffy. Add eggs, sour cream and vanilla. Combine flour, baking soda and salt; gradually add to creamed mixture. Stir in bananas.
Spread into a greased 15x10x1-in. baking pan. Bake 20-25 minutes or until a toothpick inserted near the center comes out clean (do not overbake). Cool.
For frosting, in a large bowl, beat cream cheese, butter and vanilla until fluffy. Gradually beat in enough confectioners' sugar to achieve desired consistency. Frost bars. Store in the refrigerator. Yield: 3-4 dozen.I had to bake these longer like 35 minutes at 350* since mine were in cake pans.This cake was so moist.

Nice bread RiversideLen,only thing I baked this week was a coffee cake with canned cherries on top drizzled with glaze.
