Today I baked a half of a box pineapple cake ,when it cooled a little I poured some cream of coconut over the top to sink in then added some coconut to cool whip and frosted the top and sprinkled a little more on top.For the liquid I added pineapple juice to the cake mix.It is so moist and good,very cooling.

We had fried cube steak,rice and tomato gravy and I cooked some dry lima beans.

Cwcdesign yes the mashed potatoes and sloppy joe is one of our favorites.BakerAunt I've never cooked polenta,it always looks good in a photo but I've never tried it.

Tonight we had chargrilled chicken,baked potato and coleslaw.

We had Sloppy Joe's I had mine on top of bread my husband had his over mashed potatoes and we had cole slaw on the side.

We had leftover acre peas with okra,sliced tomatoes and potato salad.

Country supper tonight,we had white acre peas with whole pods of okra,potato salad, sliced tomatoes,smoked sausage and lacey corn bread.

I baked oatmeal cookies with coconut and chocolate chips today.

My husband went fishing at the river yesterday so we had fresh fried fish,grits and cheese and coleslaw with hushpuppies.

We had taco salad.

Tonight we had marinated chargrilled chicken with sauteed onions ,broccoli and cheese and candied sweet potatoes.

We had beef stew with potatoes,carrots,and onions.I start it on top of stove then put in roasting pan and bake for 2 hours.We have this ladled over corn bread.
