I've been baking her shortbread cookies since the '80's. It's always been a family favorite. I also have one of her cookbooks, Book of Great Cookies published 1977. I'll have to pick another recipe from it in her memory.
Thanks for posting this thread. I will be trying the Pumpkin Bars with Cream Cheese Frosting (posted by bookbag). It seems to be similar to the Pumpkin Roll I make at Thanksgiving without all the fuss!

I did a little research before I started to see if there were any improvements to the recipe I've used for years. I found one that added baking powder and one that included 1 tablespoon on molasses. I ended up adding 1\2 teaspoon of baking powder (no molasses this time) to see if it made a difference in the end result. I can't see that it did. I'm not sure what it should accomplish in the cookie. My taste-tester (granddaughter) approved of the results.
In the past I have baked Libby's Oatmeal cookie with the coconut in it . I liked it but the rest of the family didn't!That sounds like a good concept. I hope it has been a success for someone. It is generally too hot here for about 6 months out of the year to turn on the oven! A couple of Thanksgivings I put my dressing in the Crock-Pot ( not enough room in the oven) and it turned out fine, maybe a little more moist than the oven!

He lives just a little North of Raleigh so will not suffer the worst of the storm. So far rain and wind have been the worst but I'm sure there will be rain all weekend. Fortunately, he was able to work from home today. This hurricane could have been much worse.
I rarely buy red delicious apples any longer since I find that they are sometimes "tasteless". I had lunch with my grandson on Tuesday for grandparents day and a red delicious apple was provided with his lunch. Since he didn't eat it I brought it home to eat later. It was almost green inside with no flavor. I just wonder how many ended up in the trash bin. Such a waste.
I ate half the Apple and put half in my Apple cake!

I used some red delicious apples that needed to be used. It's really sweet so a small piece is perfect. Part of it will go home with my kids this weekend. It's probably jam-packed with calories, but who's counting? !!!

I sure hope it moves quickly out of the area. So many people will be affected!

Would it be possible to do a recipe of the day? I know absolutely nothing about how these things work, but something like that sometimes sparks my interest. I love different recipes and cooking techniques. Thanks for all you do to keep the forum going.

Thanks everyone for your well wishes. We do indeed feel very lucky. Fingers crossed for the remainder of the season.
Tonight we had a scaled-down version of Thanksgiving with my son visiting from North Carolina. He won't be able to make it in November since he is changing jobs. It was just as good as the November version! I baked a turkey roast, which was very good, mashed potatoes, green beans, dressing and, of course, cranberry sauce. Tommorow will include more clean up from the storm since Mother Nature pruned her trees!!! Maybe I will work off some of the calories!
Just an update to say we fared well through the storm. Not as much rain as predicted and no power outage in my area. We are located about 10 miles from the Missippi border, so I expect this area was as close to the eye as possible without being directly in it. I expect Joan was affected more than I was. Thanks for the well wishes. Now out for the clean up!
It was about the same temperature here as well as being muggy! Lefover pasta for me tonight. I've been busy cleaning, getting ready for a visit from my son next week.
I'm so looking forward to lower humidity and some cool mornings. I figure anything I cook, besides salads, is going to be hot! Today I made pasta with mushroom and garlic sauce for my family. It was hot (not spicy) but really tasty. My granddaughter is vegetarian so it was perfect for her.
It hasn't cooled off any where I am, but I made some minestrone soup (minus the pasta) any way. The temperature is still in the 90's in the daytime and low 70's at night. Sure tasted good. I wish I could can some jars however, I don't have a canner. My mother used to can lots from the garden every year.
