Lamb loin chops marinated for one hour in oil, fresh rosemary, thyme, garlic and salt then sauteed
for 3 min per side and baked at 400* for 10 minutes. I served them with mint jelly, mashed potatoes and salad.May 23, 2021 at 2:29 pm #29985We're having leftover spaghetti and meat sauce with garlic toast.
May 23, 2021 at 6:10 pm #29986Dinner on Sunday night made use of leftover roast chicken. I sauteed sliced mushrooms in olive oil, then added 1 tsp. reconstituted dry Penzey’s onion that I mixed with a half cup of gravy that I made with the chicken pan drippings. I added a bag of frozen broccoli florets, then added 8 oz. cooked rigatoni and a bit of the pasta water. I grated parmesan cheese over it, along with some freshly round black pepper. We have enough for dinner tomorrow.
May 23, 2021 at 6:46 pm #29988We had sloppy joes on Challah buns. I started with the Food Network sloppy joe recipe but with numerous changes. I made careful notes, this is a recipe I'll make again.

May 24, 2021 at 8:16 am #29992Last night I tried a new recipe for a Cajun Chicken Pasta. It was good, not too spicy but warm flavors. We have leftovers for a couple of days.
We had squash from the garden.

May 25, 2021 at 10:29 am #30004Sometimes the dinner vegetable steals the show. I bought Japanese sweet potatoes because they looked better than the regular ones. The peel is purple, the inside a pale yellow. There is a very light scent of some tropical fruit when you cut into it but I can't put my finger on which one. They can be baked or microwaved and the flesh tastes a bit like chestnuts. The recipe called for baking the sweet potatoes then slicing and glazing with a mix of miso, tahini, butter and lime juice with a bit of salt and the lime zest. I think oil would work as well as the butter did. Unusual and really good.
May 25, 2021 at 4:54 pm #30014Had the grill going again since the weather cooperated. I made beef shish kebobs and boneless country pork ribs. I marinaded the beef for a couple hours and the vegetables for about an hour. I used mini potatoes, zucchini, mushrooms and red pepper. I will definitely use this marinade again. It made enough we get leftovers tonight.
I rubbed the boneless country pork with the same rub I use for pulled pork. They aren't large pieces so it was completely done in 20 minutes. I flipped them after about 9 minutes and 9 minutes later I brushed with barbeque sauce. Flipped them a couple more times and they were done. Corn on the cob and crunchy bread off the grill and dinner was complete. I have enough of that for dinner tomorrow. So that just leaves Thursday and Friday.....

May 25, 2021 at 7:46 pm #30022I'm not very experienced at grilling, either, I can do a steak but it is easier for me to pan fry it and finish it in the oven. I do burgers on the grill, and I like to do chicken or turkey using the rotisserie.
Our grill is about 24 years old and one of the gas controls no longer works, we'll have to replace it at some point (nobody does repairs on grills anymore), I think I used it less than a dozen times all summer last year, mostly for burgers, somehow it doesn't seem worthwhile to spend $1000+ on a fancy new grill, and the smaller ones generally don't have rotisseries these days.
