I had leftovers of smoked brisket , baked beans and coleslaw that my friends made for me for my Birthday dinner Saturday I turned 70🎂.Today I made chicken noodle soup from leftovers of rotisserie chicken for tomorrow night.And Friday night I won at poker ♦️ yay me.Got my party started early. I really enjoyed my weekend and felt a lot of love from family and friends.Very Blessed and Thankful!

Our dinner tonight was the rest of the beef stew. I took the day off from the kitchen and cross stitched on a table runner that I want to finish before Easter.
March 2, 2025 at 8:08 pm #45721We had some more of the vegetable beef soup for supper. Diane has hers with peanut butter, because that was the only way she was willing to eat vegetable soup when she was young.
I had some peanut butter and crackers, and I do have to agree it pairs well with vegetable beef soup.

I made the 1st half of my chicken stock today. I didn't get as much as I'd hoped. And, then I made Ina's chicken soup with ramen which she adapted from her chicken noodle soup. It has ginger, soy sauce and bok choy to differentiate it from her regular soup. Will and I cook the ramen separately so it doesn't turn to mush. Alas, my version didn't taste quite as good as his - I'll have to get his proportions for the ginger, etc. - I followed the recipe, but he's made it more often and it's more flavorful 😁

March 3, 2025 at 6:10 pm #45728On Monday, I made yogurt. I also roasted and pureed the last three small butternut squash from last fall's farmers market to make into soup later this week.
For dinner, I made Chicken-Vegetable-Farro stir-fry, using some of the broth I made last week to cook the farro, the leftover chicken, the leftover gravy, and carrots, celery, yellow bell pepper, mushrooms, and farro.

March 5, 2025 at 4:40 pm #45734On Monday I roasted a few pork loin chops. Yesterday I used one of them to make quesadilla tacos (a quesadilla folded over then stuffed with sliced pork and chopped lettuce), a baked potato and green beans.
Not sure yet what I'll have tonight.
March 5, 2025 at 5:02 pm #45735I made curried butternut squash soup for lunch on Wednesday, using the squash puree I made on Monday, along with some chicken broth from the freezer and some apple juice from the freezer that was left over from when I made applesauce in the autumn. A heaping half teaspoon of Penzey's Now Curry gave it the perfect taste. I have enough for lunch tomorrow as well.
Wednesday night's dinner was Oven Crisp Fish and Chips with Dill Tartar Sauce. My husband made a simple salad with mixed greens from the farmers' market and some nice tomatoes we got on sale at the grocery store yesterday.
