We had sausages with sauteed onions and peppers on sandwich buns I baked this morning, and broccoli salad .

January 9, 2025 at 7:20 pm #45193Thursday was a cold day, and the lake froze, although the ice is thin. We are supposed to get snow tomorrow, so we did our big grocery run to the town that lies northeast of us today. That also meant dropping off our recycling at the depot there. For dinner, I made comfort food of noodles, sauteed mushrooms, frozen peas, leftover chicken breast, and the rest of the turkey gravy. I added some dried parsley. We have enough for another meal.

Today I ate at the hospital.Michelle's surgery went well and she was doing good.I know this will be hard and lots of healing just praying no infections after and the lymph nodes looked good but we won't know till they get results back.They already started reconstruction for her.She's a tough one and I pray she keeps on the positive side.Continue to pray for her I know it's helping!.She's 52 years old.BakerAunt I hope your husbands procedure went well.
January 10, 2025 at 9:08 pm #45196I made a boneless turkey breast. Had it with twice baked potato (haven't made that in years), green beans with carrot and mushrooms and cranberry sauce.

You must be logged in to view attached files.January 10, 2025 at 9:21 pm #45199I grew up near the Mississippi, in NW Illinois. My grandparents used to tell me about the river freezing over and being able to drive over to Iowa back in the 30's.
When I was young, one of the interesting things to do in the winter was go to the lock and dam near Bellevue IA and watch the eagles, hundreds of them! They were less common for a few decades due to DDT, but they've rebounded and you can find lots of videos showing the eagles taking advantage of the dam for easy fishing.

January 10, 2025 at 10:33 pm #45202I made yogurt on Friday. We have had steady snow, but not large accumulations.
We get eagles fishing at the lake or hunting ducks or coot. I've seen the sea gulls chase the eagles away because the coot stir up food for the gulls.
Our lake used to freeze for months in the past. The area was known for its ice houses in the days before refrigeration, which is one reason the railroad ran along the lake in those days.
January 11, 2025 at 5:24 pm #45204For Saturday night dinner, I made Salmon and Couscous with Penzey's Greek Seasoning. It has been a while since I made this recipe, so I had to look at it to make sure I remembered it correctly. I did. We also had microwaved fresh broccoli.
BTW, Len, that dinner looks succulent. I've never made twice baked potatoes, but the wife of one of my husband's cousins makes them with a sour cream filling for the cousins' reunion when we do an early Thanksgiving in October.

Tonight's dinner was a replay of yesterday's although I forgot the cranberry sauce!
BA, the sour cream filling sounds good. For mine I just used a little butter and half and half (I have some half and half on hand but otherwise would use milk). I've made them without cheese, with some paprika sprinkled on top. I don't make them often because I usually don't buy large Russets, more often than not I get a bag of smaller Yukon's or red skins.
