We happily repeated the dinner from the past two evenings.
January 29, 2026 at 7:55 pm #48370We had 3 small tomatoes from my hydroponic garden, so I sliced them really thin and we had tuna melts, with the accent on the melt part, lots of sharp cheddar cheese.
January 29, 2026 at 8:00 pm #48372I have a question, I have a friend who says they have a lot of chanterelle mushrooms, they live near the river and he's going to bring some he says so how do you cook them, I have Googled but I'm asking y'all?
January 29, 2026 at 9:49 pm #48373They're often just sauteed in butter and served as a side dish, but you can add them to stews and other dishes and they're pretty good that way.
I've seen them cut in long strips and used on something like pizza.
Because of their shape, they don't work as a vessel for stuffed mushrooms, but you can use them in the stuffing or a sauce.
I see them most often in dishes featuring several different mushrooms together.
January 30, 2026 at 12:29 pm #48374Thanks Mike, I'm looking forward to trying them.Most times I have cooked other mushrooms I sautéed with butter, olive oil and garlic with a little onion then added in a little red wine.
Tonight I'm having roast beef sandwich.

January 30, 2026 at 10:45 pm #48377Yesterday I made chicken meatballs and had it with pasta and broccoli. Most of them went in the freezer for future use.
Tonight I roasted a pork tenderloin and just had a sandwich.
January 31, 2026 at 6:54 pm #48383I made yogurt on Saturday. I also made chicken broth using the bones in the freezer from the chicken we had for dinner on New Year's Day.
For dinner, I made Cider Braised Chicken with Mushrooms and Spinach, which I developed from a Washington Post recipe; I mostly kept the method and changed almost everything else. I had frozen the 2 cups of cider from the farmers market in the autumn. The spinach came from today's farmers market. We had it with mixed brown and black rice that I cooked in some of the chicken broth. We had another 2 ½ inches of snow overnight, so it made for a comforting meal. Except for a brief period one day, temperatures have not been above freezing for nearly two weeks, and the highs have only been in the teens.

January 31, 2026 at 8:37 pm #48385I had some more of my Chicken Pot Pie Soup from the freezer with an English muffin after having a grilled cheese and tomato sandwich for lunch at work.
Everyone went a little nuts around here this afternoon when a few flakes of snow started to fall - maybe lasted about 10 minutes. We've supposedly been having light snow for the last few hours, but it's definitely not sticking. The wind is strong and very cold - currently the tem is 29 feeling like 9. After tonight it should start warming up again.
January 31, 2026 at 8:41 pm #48386I had a roast beef dinner with carrots and potatoes my sister in law gave me earlier so for supper it was just a big cup of hot chocolate with lots of marshmallows 🙂 We're having extremely cold weather for us...it's 27 now and will be 21 by the morning with wind that are fierce! We had a few snow flurries thankful not much! Y'all stay warm!
