      Hoping to make a batch of tomato relish today, I've got a bunch of tomatoes to use up.

        I made a cold green bean salad to accompany my neighbor's sausage sandwiches. I decided to go with a salad that called for basil since I had so much. Unfortunately the basil ruined the salad. It was bitter! I don't know if I chopped too much or if the herbs get stronger later in the season. Lesson learned. I'll stick with a tried and true next time.

          Once basil flowers, the leaves turn bitter. Pinch off the buds as they form and you'll get a few more weeks of good picking.

            Sunday dinner was a “cooking without a recipe” meal. I cooked bulgur, and while it was cooking, I sauteed celery, carrots, and onion in avocado oil, then added sliced mushrooms, minced garlic, yellow squash, the last two snow peas from our garden, leftover pork, and the deglazed drippings from when this pork was cooked, and some from the freezer. I combined it with the cooked bulgur and added a little pepper. Next time I would add some sage or thyme.

              We had left over pork roast, and I'm making a big batch of tomato relish, about 11 quarts before it reduces, probably about 8 quarts net.

              It has been a few years since I made this, I made several large batches of it back then, but overcooked one of them and it just wasn't as good, so I threw what was left of it away today. I've already got my diffuser on the burner to limit the heat. I'll turn it down further shorter and probably take it off sooner than last time as well.

              I'll probably freeze some of it, even though it last nearly forever in the fridge because it has a lot of vinegar in it.

                Portobello mushrooms were on sale at Harris Teeter today, so I stuffed some for dinner - I found online a healthy spinach artichoke filling that I adapted slightly - they were very good - I will make again. Will had an egg burrito wrapped in one of his homemade tortillas. We were both happy with our choices.

                  Today I fried cubed steak,made gravy,sour cream mashed potatoes and heated a can of okra,corn and tomatoes that was seasoned with a dab of bacon grease.The canned vegetable was good and we put it over the mashed potatoes.

                  My sister was sent back to nursing home and they are treating the pneumonia and she seems better.Thanks for prayers.

                    That's good to hear about your sister, Joan. I'm sure she's more comfortable in the nursing home than the hospital.

                          Made apple pie jelly this time. Added some boiled cider and apple pie spice. Easy to make and really does taste like apple pie.

                            Our dinner was grilled Greek chicken breasts, leftover potato salad, and corn on the cob - our first of the season. But not from our garden - we have not grown it for years, because the racoons always got into it the night before it was ripe.

                              Raccoons are good at that. Something is nibbling on my tomatoes, almost looks like a bird is pecking at them. One of them was high enough up that I don't think it was a rabbit.

                                We had the last of the pork and then a hot dog, both with some of the tomato relish on top.

                                  On Monday, I seeded the rest of the blackberries, which came to about 1 cup, then mixed them with 3 pounds of frozen strawberries that I had thawed and drained. I made four more jars of jam and canned them. I had enough that I could have canned an additional jar, but I am out of jars, so I will use it for another purpose (see baking thread).

                                  Monday’s dinner was Tarragon Chicken, Mushrooms, and Rice, with microwaved frozen peas.
