      We've got an air quality alert today due to last night's fireworks barrage and a temperature inversion, so I'm not going outside, but I may do some baking.

        I baked my grandmother's banana bread exactly as written. I forgot to include the spices I add to it. Fortunately, it's delicious without spice.

          Ooops, forgot to include: I also made a second attempt at a new pizza dough and still wasn't happy with the dough. It's in the refrig until Wednesday. The only reason I'm fiddling with it is that a friend wants my pizza dough recipe. I'm going to send her KAF Now or Later pizza dough recipe, but I want to also give her one that's quicker to mix. It doesn't taste as good as the KAF recipe, but she has limited time.

            I made Texas Chocolate Sheet Cake today, an 8x8 and a 10x10, one of which will go in the freezer.

              Fortunately, I have more frozen zucchini bread from the freezer for tonight's dessert. Not only is it in the 90s, but my husband and I are tired due to all the fireworks last night and the stress of helping our dog. A large box fan, lights turned out, bandana treated with pheromone spray, and radio tuned loudly to jazz music. We survived the Chamber of Commerce ones, across the lake from us, and then the kids and grandkids of the next door neighbors (who are riding out the pandemic in Florida) started some big ones. Today, all the debris from the Chamber fireworks on the east shore are washing up on our west shore.

                  I made my usual sandwich buns but I tweaked it a little, I added a little more semolina and a little less bread flour. It baked up nice and smells good.

                    I made two loaves our usual oatmeal-whole wheat sandwich bread. This time I forgot to put in sunflower seeds, flax seed meal, or any other nuts and seeds.

                      I got home from work and Will was finishing up making tortillas! We’ve had trouble getting them at the Market, so he figured he try. He found a video on YouTube and they are really good. He said they were so easy he probably will keep making them

                      I made KAF dark and dangerous mocha ice cream. Made the custard after work yesterday. Brought a large double chocolate cookie from the resort bake shop to crumble since I didn’t have time to make brownies.

                      We heard fireworks 2 nights in a row. Our company did that to keep the numbers down at the beach club each night instead of the normal 4th mobs. The county cancelled all fireworks

                        Made two loaves of whole wheat as I am still building a new starter. The whole wheat is eaten when there is no sourdough. I think I am overproofing it as I don't get any oven spring and it has a flat top. But it has a good crumb, texture, and taste.

                            I used to make some part whole wheat tortillas. I stopped because I was using Crisco as the fat, and I no longer bake with solid Crisco. I have made some of the flat breads that KAF has on its website. Homemade tortillas are delicious. It's great that Will is branching out!

                            I didn't want to bake today, but I needed to bake the Whole Wheat Sourdough Cheese Cracker dough in the refrigerator, so the oven is on this morning, and I will finish as quickly as I can. Our heat is supposed to extend through the end of the week.

                              I made whole wheat sourdough crackers morning. First sourdough attempt since I had to make a new starter. They're pretty good but the starter probably needs another couple days of maturing. I'll see how fast my boys eat them.

                              I made pizza last night. I left the dough a little wetter than usual and, accidentally, it came up to room temp. I usually have it a little chilled. But my wife told me at 3:00 that I was making pizza so I just put the cheese and dough on the counter and the dough was warm and puffy when I used it.

                                I baked Oatmeal Breakfast Muffins for the freezer. They're Oatmeal Muffins with spices. Today, I used cinnamon, allspice, nutmeg, cardamom, and 1/16 tsp. cloves. They have a lingering heat that is pleasant with the good taste. I'll freeze them for future breakfasts.

                                  Your muffins sound delicious, Italian Cook!

                                  On Tuesday I baked the Apricot Oatmeal Bar recipe that is posted at Nebraska Kitchen. As usual, I cut the brown sugar to ½ cup and the salt to 1/8 tsp., and I use white whole wheat flour. This time I added 1 Tbs. flax meal. Instead of the apricot jam, I used my own black raspberry jam. I have almost used all that I canned two years ago in a bountiful harvest. Last year, due to house construction, I only got to do one batch. This year has been droughty, so the black raspberries are not as plentiful or as plump. I hope to get at least one batch of black raspberry jam. We have a lot of blackberries coming on as well but again, we need more rain.
