      Tonight we had breakfast for supper..Sausage,eggs and hash browns with lots of onion.

      Chocomouse your rolls sounds very good.

        I cooked some ground pork then added canned baked beans and had it over brown rice. It wasn't bad.

              Last night I made Will’s version of Cashew Chicken from a Pioneer Woman recipe. We add a lot more vegetables which we cook first so we don’t over cook the chicken and gojuchang in place oyster sauce. Leftovers tonight

                We tried something new tonight: Bacon-Cheeseburger Salad. It's similar to a taco salad. The ground beef is flavored with Worcestershire, Dijon, ketchup, garlic, onion. The dressing is made with red wine vinegar, garlic, mustard, bacon fat and crumbled bacon, sugar. I used shredded iceberg lettuce, thin slice onions, peppers, and shredded cheddar. The flavor is excellent, but it's difficult to eat. Everything falls off the fork! I might try it again, wrapped in a tortilla.

                  For dinner on Wednesday, I revisited the baked fish and chips recipe that I tried the first week of May that uses pollock and russet potatoes. Again, I made a half recipe. Based on my first effort, I made some additional changes. This time I replaced the Old Bay seasoning on the potatoes with garlic powder, onion powder, and a bit of salt. For the fish, I used half a tsp. Penzey’s Greek seasoning in the buttermilk marinade. I used an additional tsp in the Panko. I did not add it to the partial egg I used (saving the rest for another recipe). I used AP rather than white whole wheat flour. The results were much more flavorful than the first time I made the recipe. I think it would also be good with Lemon Pepper as an alternative to the Greek Seasoning.

                    Yesterday I made the cucumber salad I adapted with cucumbers from our neighboring gardener - he is further along than we are. We liked them better than last weeks’s donation. Trying to figure out if it was because of the type of cucumber or if hers had gotten too big.

                      No cooking here tonight I had a bologna and tomato sandwich and a glass of milk.Husband ate whatever he wanted.

                        On Thursday, I tried a new recipe to go with the boneless pork that my husband pan cooked for dinner. I made Quinoa Summer Salad from the Penzey’s website:

                        I reduced the olive oil to 1/3 cup. I did not have any parsley. I did not use the optional cayenne. I did add 4 oz. of feta to the salad once it had cooled. We like the recipe with these changes I will have to buy more of Penzey’s Country French Dressing Mix. I had just enough to make this recipe.

                                I took some Mississippi pot roast from the freezer and heated it and we had that on hot dog buns with some mozzarella cheese on top and put it under broiler to melt cheese and heat the bun,I added steak sauce to mine it was very good.

                                  We had tried scallops and whole belly clams with onion rings and cole slaw. We are in Maine for a long weekend -- I did not cook the meal!
