The last two nights I pulled some meatballs from the freezer and had it with spaghetti. Last night I had it with green beans and carrot and tonight I had it with a salad.
I had leftover chicken tenders made into a wrap.
Tonight I made a pasta dish that my friend said she and her husband eat on repeat. I'm glad I only made half the recipe as I found it rather bland. That may have been because I used mild Italian sausage instead of spicy, but I'll finish what I made and won't make it again.
We had chicken salad sandwiches again. I also glazed the chocolate cake I made yesterday, and we had some for dessert.
Dinner on Friday was easy: ham slices from the freezer, warmed up pasta and goat cheese, and microwaved mixed vegetables, with more of the chocolate cake for dessert.
That leek parmesan cheese tart looks delicious, Kimbob!
I was unable to score any asparagus at the farmers market this morning. The vendor had only a small amount because the freeze earlier this week got most of it. I was able to buy a nice salad mix and a container of spinach, so we had salad for dinner, along with ham sandwiches on the vegan potato buns that I baked on Thursday.
I made a sheet pan dinner with Greek Lemon potatoes, green beans tossed in the same marinade and chicken sausage. It was delicious and I have leftovers
Your tart looks beautiful, Kimbob.
I used the rye bread I made and some tomatoes from my hydroponic garden to make tuna melts tonight.
I made a pork roast yesterday. Tonight I made eggplant parm and had it with leftover pork and a salad.
I found some beautiful strawberries at the farmer's market. I made some buttermilk pancakes and ate strawberries and maple syrup on pancakes to stretch out the strawberries. Will be finising off the remainder of the strawberries with Greek yogurt. I've had strawberries in a salad in Canada. I only remember strawberries ( wonderful) and greens ( boring ); does anyone have a recipe? I don't think it was iceberg lettuce.
