No cooking for me tonight I had a tomato sandwich first one this summer.

June 8, 2025 at 6:36 pm #46505Yesterday I made a crustless quiche, had another piece tonight and two more for Monday and Tuesday. It's a great way to clean out the fridge before I leave on Wednesday!
June 8, 2025 at 9:31 pm #46506We had leftover Maple-Glazed Pork Tenderloin and the rest of the mashed potatoes with microwaved frozen peas. It was muggy today, so I was happy not to cook.
June 9, 2025 at 6:57 am #46507We had chicken with leftover romanesco sauce. I wish I could remember where I found the recipe for the sauce because it reheated very well after being frozen.
Because we have a bocce match this afternoon I need something I can prepare ahead. I am thinking of making coronation chicken salad sandwiches. There are several different recipes for this originally British recipe. June 9, 2025 at 9:51 pm #46510We had most of the rest of the hamburger stroganoff over brown and mixed rice with microwaved fresh broccoli. That finishes our leftovers, so I will need to cook tomorrow!

The bread came out a little dark but I'm good with that.

The past three nights, we dined on leftovers from three different meals, all made when the bonus son was here, but by Tuesday, we had cleared the refrigerator, so I made Crispy Oven Fish and Chips, which we had with the dill tartar sauce I made last week and microwaved frozen mixed vegetables.

Yesterday I made pork tenderloin on the BBQ grill. I had it with leftover mashed potatoes and sugar snap peas. I reheat the potatoes by making patties, sprinkled with parm, in a non stick skillet, until the bottom is golden brown (the parm side).

June 11, 2025 at 6:13 pm #46526For lunch on Wednesday, I needed to use a half egg and a bit of brown and wild cooked rice. I sauteed green onion and chopped mini-red bell pepper in olive oil, added some kale, then added the rice. I mixed the half egg with another small one, then poured it into the pan and scrambled. I put a bit of grated mozzarella on it. I had it with some toasted whole wheat oat bran bread.
Wednesday's dinner was bone-in roasted chicken breasts that I rubbed with a bit of olive oil and sprinkled liberally with Penzey's Justice blend. I also made radiator pasta with Greek cheese and put freshly ground black pepper on my serving. We had microwaved frozen peas to round out the meal.
