I used the rest of the roasted chicken breast to make chicken salad on Wednesday for sandwiches for dinner on the bread I baked earlier. It was a late dinner. I had to replace my outdated (no longer supported) phone, and the set-up took a frustratingly longer time than anticipated
I made a stir fry with bbq pork tenderloin, carrots, cauliflower, onion and sugar snap peas.
I had leftovers hotdogs with slaw, watermelon ,tonight had a tomato sandwich and going tomorrow for a few days to my friends for the 4th celebration.
On Thursday, I made yogurt. In the afternoon, I made another batch of Black Raspberry Jam, with a yield of four 8-oz. jars and one 4 oz. That will be the last black raspberry jam of the season. I was hoping for three batches, but the woodland that has a good patch suffered some clearing from a road crew over the spring. The bushes will be back, just not this year. The majority of the berries came from our front north terrace, but we found some in the smaller woodlands as well. Today, I picked three blackberries, the first of the season, so by next week, I will be into blackberry season.
For dinner, we had chicken salad sandwiches again, and I had some raw carrots as well.
I made grilled chicken thighs (boneless, skinless) with an apricot jam glaze. The recipe was from Fine Cooking. I served it with a baked potato and a corn and tomato salad. ( We had a personal tragedy in our family which is why I have been absent. I do not want to go into details.)
Made 2 quarts of yogurt and potato salad for tomorrow. Had sauerkraut and weisswurt for lunch. I'm still using up stuff in the freezer and pantry. I took a bunch of food to the town food pantry yesterday.
I bought a 3.5 pound eye of round roast that I'm going to do sous vide for tomorrow.
I did my eye of round roast sous vide at 140 for about 24 hours and it was the tenderest eye of round I've ever had! It should make great sandwiches, too.
I'll do this again but most likely with a stronger dry rub.
