We had sandwiches--and hot dogs--on the banh mi buns I baked.
I made burger and hot dog buns from the Banh Mi dough (see baking thread), and then made a batch of Sloppy Joes for supper. (Found a garlic-free sauce powder which got added to some sauteed onions and red peppers, plus some tomato sauce.)
We had the leftover chicken with artichokes and mushrooms, or rather, I had the artichoke part, and my husband had the mushroom part. He really liked how I did the chicken thighs, which are coated in flour with some Penzey's Smoky Paprika and onion powder. I will probably use a little more paprika next time since he liked it. We had it with more of the brown and wild rice mix and some microwaved mixed vegetables from the freezer.
Yesterday I had another bacon and tomato sandwich and today I made chicken wings in the air fryer and boy were they easy and good. I cooked them 10 minutes at 390* flipped them and cooked another 10 minutes at 400* . I ate wings and saved the celery and carrots for later.
Last night I had a hamburger, broccoli and mashed potato. Tonight will be a repeat as I have leftover potato although the veg might be different.
The wings look delicious, Joan! Of course, you ate those first!
We warmed up two more of the pecan-crusted pork chops and had them with more of the pasta-vegetable salad.
I made a tuna melt with avocado slices between the tuna and cheeses (open-faced)
