Joan, that sounds like the perfect meal for a southern boy!! And you're a good Mom!
We had salads for dinner: broccoli, corn and beans, and seafood.
January 31, 2025 at 8:24 pm #45390Last night I made a tortellini dish that I had been wanting to try. It was basically an Alfredo sauce with mushrooms and tortellini (2 packages), that after you put it all together put under the broiler for a few minutes. I substituted a package of baby spinach for one of the packages of pasta. It was disappointing to say the least - the pasta`was from Trader Joe's and the worst I've ever had from them - texture, flavor, etc. the sauce never really came together and I couldn't taste the mushrooms. Oh, and my pan was hard to clean - hah. Anyway, I wasn't going to throw it away, so tonight I baked a dish of it in my toaster oven. It was an improvement but the pasta itself still had issues.

Tonight I had a burger, roasted potato and brussels sprouts.

We had most of the leftover soup for dinner tonight. There is enough for me to have for lunch tomorrow.
February 1, 2025 at 7:01 pm #45402Just wanted to say I had the best week I've had in a long long time. Sonny Simpson came in last Saturday and stayed until today. He helped me do things around the house that I needed done and we had a great time going and doing things together and of course you know I love to cook so I cook some of the things that he liked . I asked him this morning what he wanted for breakfast. He said I'll get something later . Last night we had fried chicken, macaroni and cheese field peas with okra slice tomatoes and cornbread so what does he get for breakfast this morning a big old bowl of leftover peas and okra and crumbled up cornbread in it he still country at heart .❤️ love ❤️ Love my boy.He's back in Dallas and I'm looking forward to the next time already. I am very blessed.
I had a hotdog for supper.

February 1, 2025 at 9:38 pm #45409I've made my share of duds or 'meh' meals, we try to eat as much as we can of them but usually wind up throwing a lot of it out.
Tonight we had some more vegetable beef soup. I was full enough I didn't need a salad.

We finished up the pork loin and most of the barley, butternut squash, and spinach. There is a little left over that I will eat for lunch tomorrow.
