I bought me an air fryer and today I made chicken tenders in it and microwaved a baked potato.I liked it so I'll be experimenting with it.

For dinner on Sunday, I made my healthier version of my mom's hamburger stroganoff, which we had over a mixture of brown and wild rice. It is, for me, the essence of comfort food. We had it with microwaved frozen peas.

Tonight I cooked a couple of boneless chicken breasts in a skillet, had it with carrots and green beans and bread. Enough chicken left for tomorrow.

We had more of the hamburger stroganoff over brown and wild rice. We were too lazy to cook a vegetable to go with it.
February 3, 2025 at 8:02 pm #45443Last night I made a sheet pan dinner of veggies and chicken sausage. Today I made a batch of the Barefoot Contessa's Roasted Butternut Squash Soup with Curry Condiments. A friend came for dinner and I sent her home with some soup. I still have plenty of both meals so I shouldn't have to cook the rest of the week.
February 4, 2025 at 9:31 am #45445I stir sauteed some onions and green pepper then added some thinly sliced beef tenderloin steaks and wrapped it all in a tortilla. I did marinate the steak in some teriyaki sauce.

February 4, 2025 at 6:23 pm #45449Navlys--that meal sounds delicious. I need to do something with tortillas. I noted that King Arthur has a recipe for tortillas made with sourdough "discard."
I made Oven Baked Fish and Chips with Dill Tartar Sauce for dinner on Tuesday, with microwaved broccoli on the side. It is an easy dish to make, which I needed, as we did our big grocery shopping trip to the town northeast of us today, which meant dropping off stuff at the Recycling Depot before shopping Aldi's, Walmart, and Kroger. We are also in the market for a microwave, so we looked casually at what Walmart and Lowe's had. More research is needed.
